For decades, we were told to choose low-fat dairy. New research says otherwise

A new Canadian study led by University of Toronto professor Harvey Anderson adds to growing evidence that full-fat dairy can be part of a healthy diet.

In the 12-week study, 74 adults consumed different amounts of dairy under varying dietary conditions. The researchers found that eating three servings of full-fat dairy per day did not negatively affect body weight, body composition, energy metabolism, or blood lipid levels. The findings were recently published in The Journal of Nutrition.

Why Full-Fat Dairy Has Long Raised Concerns

Dairy foods contain saturated fat, which has traditionally been associated with higher cholesterol and an increased risk of cardiovascular disease. As a result, dietary recommendations in Canada and many other countries have typically encouraged people to choose fat-free or low-fat dairy products as a way to reduce saturated fat intake.

Anderson, a professor of nutritional sciences at U of T's Temerty Faculty of Medicine, says the evidence from human research has not always matched those concerns. Numerous human studies have found no link between eating full-fat dairy and harmful health outcomes. Some studies, including recent research led by Temerty Medicine professor Kozeta Milliku, have even reported positive or protective effects associated with dairy consumption.

I’ve read there are processes that do use chemicals.

Why would you NOT want the full fat, as Nature intended, anyway?

Just curious.

Milk is good stuff, but it’s gotta be ice cold. I could drink a half gallon of that stuff then. When it’s room temperature it isn’t tasty. I don’t drink much Milk any longer, mainly because it will spoil by the time I’m done with it. I discovered it’s 300 calories a glass. I used to hit 1000 just snacking between meals. I still like Cheddar though. That Tillamook stuff ought to be illegal. And Ice Cream.

I think simply because I like the taste. It’s just a glass per day so I don’t think it’s a big difference from a nutritional point of view.

Hershey’s does make a syrup without corn syrup now, but it’s so easy to make. I always liked the metal cans of chocolate syrup. I haven’t made it in a while, but it’s just kind of boiling water and sugar to make a simple syrup and adding Cocoa powder. And a little Salt. Salt makes chocolate and cocoa taste better, bringing out the flavor, like anything else. Important for the flavor.

Cocoa has gotten more expensive. What hasn’t? The Hershey’s product has increased size from 8oz packages to 6oz packages.

I use Bacon grease for Cookies, when the Butter supply is getting low. It works excellent. Great for biscuits and cornbread too. And popping corn.

A lot of the cheap Butter has a lot of water in it, and not one more molecule of Butterfat than the USDA allows for. This is one reason Margarine never worked right for Cookies. It’s got a bunch of water, when the recipes are based on a certain amount of fat to turn out right. It ain’t rocket science but they keep queering the ingredients and quantities.

Toll House morsels - chocolate chips - all those Cookie recipes are based on 1 pound packages. They run under 12 ounces now.

I never listened... low carbs, whole fat dairy, real butter and eggs my whole life. Yet I have very low cholesterol levels.

They just looked solid. I think canners and rural people are natural stockpilers. Some people call them “preppers”.

Use a can opener, on each side. When you make your batch, use cane sugar. Sometimes there isn’t much benefit to using cheaper sugar - derived from Beets. But cane sugar is a much cleaner product.

No, there's not.

My 80-year-old father had emergency surgery (it was complicated and 3x longer than normal) to remove a necrotic gallbladder late last year. His PCP has been coaching him on 'living with type 2 diabetes' for >20 years rather than coaching him on healthy living (I shouldn't have to explain why that's a BAD thing).

He never recovered fully. I believe he either suffered a stroke on the operating table or in post-op. He hasn't been able to walk unassisted since. In fact, his "post-operative weakness" (the medical term they are using to describe what is typically a normal post-operative condition, but in this case is in the absence of a cogent diagnosis), meant that he couldn't go home and has been in/out of SNF (skilled nursing facility), the ER and ALF (assisted living) ever since and is now wheelchair bound (too weak to walk on his own with odd balance issues). They don't know what's wrong with him, choosing to now label his condition "MAJOR NEUROCOGNITIVE DISORDER DUE TO UNSPECIFIED DISEASE, UNSPECIFIED SEVERITY, WO BEHAVIORAL DISTURBANCE."

After his last hospitalization for UTI/sepsis (he has a semi-permanent Foley catheter because is health isn't good enough now for the surgery he declined a year ago) there was a big brouhaha over his destination because he was so weak. I inquired about palliative care consult and suddenly Kaiser took interest: Within 12 hours an MD reviewed my father and found him classified as 'hospice'. The irony: It opened the floodgates to assistance, care and contact (I suspect it opened a number of other billing codes on which they could get $$).

By then my father wasn't eating and losing weight. Fast.

Here's the irony:

Rather than continuing to decline, he began to improve. He began eating, the UTIs seemed to cease, cognitively he returned 'mostly' to normal, he gained back lost weight. He's not 100% (FAR from it: Still in SNF and wheelchair bound due to lost muscle).

He was only on hospice for just over 11 weeks. He is now OFF of hospice.

That's the irony. Now the punchline:

He had to be removed from ALL medical care - meds (including T2D meds, insulin, statins etc.) - under hospice, receiving ONLY nsaids for minor pain in his shoulder.

Clarified: He was dying under orthodox medical care and rebounded when said 'medical care' was removed, saving his life.

(we have secured him a new PCP, his first appt being next month)

I've calculated that all of the Medicare billings have totaled well over $350k, not including the SNF (his new residence).

Footnote: We still don't know his blood glucose levels because he hasn't seen his new PCP for an order to test.

His Type-2 Diabetes - which formerly required BOTH injections of insulin AND Metformin, which has led to trips to the ER for both hypo and hyperglycemia - has been completely untreated for about 3 months now and he eats whatever he wants in the facility dining room. Zero atypical diabetic symptoms in the absence of medications.

According to some doctors he should be dead, but somewhere I'm sure somebody's happy the billing statements for care have resumed...

Milk is the most amazing food product. First off, all mammals have mother’s milk and get so many health benefits from it. When milk curdles, we can deep fry the chunks for curds or get yogurt. Freeze it, we get ice cream. Then, it turns in to cheese. And even when the cheese gets old and moldy it becomes delicious aged cheese like blue cheese. Unfortunately I can’t digest mammal meat, but thank God I can still have dairy. I love it.

We buy our milk from a regional dairy, Braum’s. It’s all from A2 cows, and it’s delicious, but it’s pasteurized.

Probably the biggest factor in flavor is what the cows have been eating.

One of my cousins, based on having hunted deer near an onion farm, reported that the meat came "pre-seasoned".

It takes a chemical process to REMOVE the fat, from dairy.

When did a butter-churn become a "chemical process"?

OTOH, it really does take a chemical process to convert flour into bread ...
