We like to buy the whole tenderloin when it goes on sale and butcher it ourselves. A good sale is around d $10/lb (though I think that p4ice is slowly going away, not seeing it much any more). Takes a little time to cut the silver skin from the loin but worth the effort for the savings. Takes about 1/2 to process and freeze.

As for finding the healthy merits of KETO, I’ll note that a nice marbled Ribeye is far superior to fatless filet mignon.

Ideally, I want about 75-80% fat to 15%-20% protein.

Beef has gotten ridiculously expensive, including the so-called "cheap" cuts like chuck roast - even ground beef, which sustained a lot of us during tough times is around $6.00/lb. now.

Filet Mignon is for very special occasions now - got two small ones at a local butcher - dry aged - $60.

This retired meat cutter here never like filet. No taste (in my opinion.) Fillet is tender because it's a muscle that just sits on the animals back and gets very little movement during the animals life. Like a piece of crosscut shank is tough and is good mainly for soup or stew. Give me rib eye or a chuck roast with plenty of marble. Good flavor there!
