All three are in local small grocery that is Hispanic run. I bought some parsnips.
Mashed parsnips are a great substitute for white potatoes.

Yes. I love turnips but the wife won’t have them.
I’ve fallen for the old rutabaga scam... home from college, dad was on the road, mom a hot bowl of squash-lookin’ stuff, called it “new vegetable” (no really, she’d left a note on it). It wasn’t heinous, but it didn’t thrill me.
Parsnip and turnips are something I’ve rarely eaten. They need a new publicist, new marketing names. :^)
Yup, and turnips are RIDCULOUSLY easy to grow. Just throw some seeds in the ground and ignore them.
You’ll have more turnips than you can use.
I use them in beef barley soup as they don’t mush up like potatoes, and are lower car.
They are good mashed with butter and salt.
I want to try them as oven roasted some time, like I do for potatoes and carrots.
I live in Mississippi, turnips are everywhere here. They stink to high heaven when cooking so I tend to avoid them.
Varieties below. The White one is mild and very good in salads or in Japanese Soup. (Throw it and some green onions chopped and raw in your Ramen noodles.) You can slice the Rutabaga thin and in strips and use it like noodles in soup. Both of them can be mashed with potatoes for Thanksgiving or Chrismas or anytime dinners.

Another good one that is harder to find is kohlrabi.
I grew up eating rutabagas alongside the Thanksgiving turkey and the turkey for Christmas as well. they were mashed with lots of butter, salt and pepper and they were delicious with the gravy.
