High salt content is a drawback.As long as you eat enough Potassium to counter the Sodium, it should be fine.

We had a dear friend who must have eaten kimchi for breakfast, lunch and dinner. You knew he was there (office) the second he walked through the door. Nope not for me. My Dad used to make sauerkraut by the barrel full. Loved that stuff fried in bacon grease. So much for healthy.

I make kimchi. But mostly I get it at the “hippie” section of my grocery store. Alongside dairy-free cheese and such.
But it is quite easy to make.

I’ve been to S. Korea many times. I’m always happy with the food, love Kimchi now. Then I realize how healthy I’m eating in general and it’s a stark contrast when I return to the USA...starting at the airport.
Then you have fast food again and realize just how trash it is. I’ve changed my diet because of it.

I only add a little salt to my kraut, and then just to “sweat” the juice out of the cabbage.
For sauerkraut I just shred the cabbage and submerge it in its own juice. Give it a week or two and the fermentation does its magic.
Kimchi is pretty much sauerkraut but with a hot pepper paste worked in. Same principle of anaerobic fermentation.
