Bitter substances make the stomach acidic: How bitter food constituents influence gastric acid production

In the stomach, parietal cells are responsible for acid production. They react not only to the body's own messenger molecules, but also to bitter-tasting food constituents such as caffeine.

A research team has now carried out a study on a human gastric cell line. Their results help to clarify the molecular regulatory mechanisms by which bitter substances influence gastric acid production.

It is known that taste receptors for bitter substances are not only found on the tongue, but also on the surface of other tissues and cells. These include the parietal cells of the stomach, which secrete protons into the stomach—i.e., produce gastric acid.

Recent studies have already shown that the bitter taste receptors found in parietal cells are involved in the regulation of gastric acid release. However, the underlying molecular signaling pathways are not yet fully understood.

To further clarify the molecular interaction between bitter substances, bitter taste receptors, and gastric acid production, a research team has carried out a study on a cellular test system. This involves human parietal HGT-1 cells, which are able to secrete protons and, like taste cells, have bitter taste receptors.

According to this hypothesis, bitter tasting food constituents stimulate bitter taste receptors that are embedded in the cell membrane. This releases calcium ions inside the cells, leading to ion channel opening. This, in turn, allows sodium ions to flow into the gastric cells from the outside, ultimately contributing to the release of protons.

First author Phil Richter explains, "We have successfully tested this mechanism with the two bitter substances caffeine and l-arginine. As expected from previous results, both food constituents were shown to stimulate gastric cell proton secretion in our test system."

It would seem bitter tastes help stimulate gastric acid release.

This could mean eating less bitter foods near bedtime could help with acid reflux. Additionally, as we tend to lose the ability to create stomach acid as we age, perhaps bitter foods could help with digestion, as well.

Interesting!..............

I have been dealing with a lot of acid reflux. At the same time I have cronic UTI infections. Thus I have been drinking about a cup a day of un-sugared, not from concentrate, pure cranberry juice from Trader Joe's Market. I am having less reflux now and feel better. The cranberry juice is quite bitter...but I've adjusted to that and now enjoy it with my breakfast.

how much sugar is in the trader joe’s cranberry juice?

(would stevia negate the acid reflux benefits?)

there are other benefits to cranberry juice.

GERD, indigestion, etc., as caused by LOW stomach acid, not high (contrary to the geniuses in the medical community), so taking bitters, HCL, etc., will be of great benefit to those that have these issues.

UTI’s can also be caused by low stomach acid because your ‘flora’ is out of balance whereas good stomach acid kills bad bacteria

I take D-mannose every day — 2 when I get up, 1 before bed. Have gone from 3-4 UTIs / yr. to maybe 1, if that often.

the trader Joe’s Cranberry juice is not from concentrate and is PURE.. no sugar added. I will need to check the amount of natural sugar.

Mine was on/off for years - after one flare up that was recurring over about 6 weeks, it felt like a slight sore throat and I became worried years of earlier smoking had caught up with me so I asked my doctor for a referral to gastro ... turns out the lower couple inches of my esophagus had been taking long-term beatings and I had developed some Barrett’s Mucosa spots - the bottom one was cancerous.
Turns out the extended flare up may have saved my life because the cancer was diagnosed very early and I was told it was one of the smallest they had ever seen diagnosed - because it wasn’t big enough to be causing the discomfort and the acid burn that worried me made them catch it early.
Still needed radiation and chemo which meant a port and a stomach feeding tube which nobody wants.
If you haven’t had an endoscopy, I highly recommend you get one because if I had had one a year earlier, they could have cleaned everything up w/o the radiation and chemo and all the crap that goes with it.
