Oh shoot I just noticed that cookbook on Amazon is unavailable. There are a few that come up when you do an Amazon search on it.
I’m thinking this would match well with spaghettini? Or just spaghetti?

With the weather turning cool and wet here on the Central California Coast, I'll be making Sicilian Cod Stew this weekend.

COD STEW
cod
1/4 medium onion
1/2 stalk celery
2 tbsp oil
large can tomatoes
2 medium potatoes
Sicilian green olives (the intensely tasty salty kind)
capers
pepper
pinch sugar
Slice the celery and onion, and place in a heavy skillet with oil. Saute for 10 minutes.
Peel, quarter and par-boil the potatoes.
(A note from Mom: Run the tomatoes through blender for a few seconds to break them up. No more than that.)
Add the potatoes and tomatoes, and sprinkle with the spices. Cover and cook for 15 minutes.
Add the cod, olives and capers, and cover the fish with the mixture. Cook until the potatoes are soft. (The potatoes are the clock,)
Lol Spunky, I remember reading a cookbook and one of the first directions it gave was this:
“Remember, before your husband gets homes from work, make sure you have on a clean shire, your hair is combed properly, and you have a smile on your face with which to greet him.”
It was a very old cookbook!

Dump the whole thing in. The anchovies are packed in olive oil, and having extra olive oil doesn’t hurt.

Ha! That sounds very similar to what I used to make, except for the uber salty olives.
I used to get the bacala from the market from a large barrel and soak it for a couple of days to get the salt out.
Cod stew is delicious. It’s been a long time since I made it.

I don’t blame you for staying close to home - it’s much safer. I do the same.
I actually rinse the olives and capers under water to remove all the excess salt. The cod provides enough salt on its own.
It sure does. I remember one year I soaked the bacala so well that I had to add more salt after I made the stew lol.
Oh yes, linguini would be good.

When I was 16 and graduated Grade 12, I got myself a job at the Banff Springs Hotel as an elevator operator lol.
They were the old elevators with the cage door inside that you had to open, and the wheel thing with the handle that you had to operate to make it move. Oh my goodness, hadn’t thought of this in ages.
We used to have to march in (a very fancy shmancy hotel at the time) to the bagpipes, complete with the pleated skirt and green jacket uniform, including white gloves. So funny. I met Simon and Garfunkel! And Alfred Hitchcock!
Yes, Banff is beautiful, as is Lake Louise.
We went to Banff about 10 years ago, I’d love to go back.

Banff is beautiful. My brother moved to Calgary a year ago, so a stone’s throw away. I’d love to see Banff again as well. Such a pretty spot. The mountains, the Bow River....stunning.
