It’s not just geese; you will see white material in the droppings of many birds. Unlike mammals, birds do not have a separate excretory system that eliminates nitrogenous wastes from their bodies. Whereas, our bodies eliminate those wastes in the urine, in birds it builds up as the white substance you are referring to and is eliminated in their feces.

And, somewhere on the thread, I saw someone expressing concern about having geese flying overhead defecate on him. Not going to happen. Nature provides for birds to lighten the load prior to take-off, so a bird already up in the sky will not need to defecate.
