There's no bad time for comfort food, and it's hard to think of any meal (or snack!) that's as quick and satisfying as a crunchy, gooey grilled cheese sandwich.

The good news is that you can use any cheese you like for your grilled cheese. If it's your favorite, give it a go!

Going to have to find some. I love Gouda & hunks of parmesan are like crack to me. My Italian mother in law sends us hunks of parmigiana reggiano, but to me it can’t hold a candle taste wise to parmesan.

Sharp cheddar with sourdough is best. Just make sure you use lots of butter when frying.

I make grilled cheese sandwiches in an air fryer. Spray a little olive oil on the bread. Comes out great without a lot of butter.

#43 I use Kraft or Kroger brand American cheese. I butter "The Rustic Oven" Hearty Grains & Seeds bread then add to frying pan to toast. I throw in ham slices on the butter in the pan then when the bread and ham are nearly done cooking I add the cheese. Put both slices together and take out my serrated knife to slice down to bite-able bits. Hmm...

Sharp cheddar with buttered sliced artisan sourdough. And homemade tomato soup. I blend and heat a can of tomatoes with a little whole milk and chix broth after sautéing the tomatoes in sotenened onions/celery.

Don't get me started on the sourdough!

For a couple of years - 2 decades ago - I ate big brunches
instead of breakfast & lunch. Anyway - Scrambled egg sandwich on
sourdough with a few strips of fried bacon, Monterey Jack cheese,
big slices of tomato, big slice of red onion, few leaves of romaine
lettuce topped with spicy brown mustard or Heinz 57 sauce.
Sprinkle of black pepper, maybe garlic powder.
Toast that puppy in the convection oven - oh yeah
