Thanksgiving is tomorrow and I have already started cooking my first turkey yesterday via sous vide. Tomorrow I smoke my second turkey on the Weber grill. Therefore I am cooking TWO turkeys in tandem for Thanksgiving and will continue doing so in the future whether it be for Thanksgiving or otherwise.
Why? Well I first cooked tandem turkeys earlier this year. In addition to providing extra turkey for the guests, I was able to serve up INCREDIBLE homemade gravy which was made possible by using the wings that weren't used in the sous vide turkey as well as the rest of the carcass after cutting off the legs, thighs, and breasts. In addition, the juices from the sous vide were used in making my turkey stock. After simmering down all that meat and bones provided by the unused portions (wings and carcass) of the sous vide turkey along with the trimmings from the turkey designated for smoking, the resulting stock with veggies, garlic, and herbs added made for a SUPER POWERFUL turkey stock which was used as my base for making the turkey.
Also since one should not use too large of a bird for smoking (both of my turkeys are in the 13 pound range) you are sure to have more than enough turkey for your guests (about 10 in my case). So a total of FOUR legs, FOUR thighs, and FOUR breasts. And since gravy is KEY for making successful turkey, the boiled/simmered down ultra high flavor turkey stock has served its purpose.
So after my tandem turkey experience earlier this year which is being repeated now, I highly recommend folks try cooking tandem turkeys.

NOT expensive because I stocked up on Publix turkeys at 49 cents per pound. Total cost of both turkeys were under $14. Stuffing mix at Aldi's only 75 cents per box. And liquor and a lot of other stuff I got on the cheap cheap via bargain hunting and coupons.

Since my dog started cancer treatments in January, we’ve pretty much not been able to afford much meat of any sort.
Money goes to his vets.

Okay but tandem turkeys are really not much of an expense due to the Thanksgiving turkey sales. Oh, and I got a sous vide cooker on the cheap cheap for just $50. About a third the price of sous vide cookers which you can pair to your cell phone. I don’t get why I would want to pair it to my cell phone since I still have to be home when I put turkey (or whatever else I’m cooking) into the sous vide container so why would I need to operate it via cell phone?

Why not deep-fry one and get the trifecta?
You have to remember to do it away from the house, near where you park the EV for safety.
Last year I deboned the turkey and precooked the white and dark meat at different sous vide temps, then warmed all the meat at 140F to serve.
I also did the same thing you did: created broth with the bones and used it for the gravy.
Perfectly cooked turkey and the best gravy I have ever tasted.

Maybe I need to trademark that term. I checked on the Web and NOBODY before me has used that word. "El Pavorracho" is a very very happy Thanksgiving made due to lots of turkey and made even happier by lots of good booze. The Blue Curcao frozen margaritas I will be serving are BEYOND BELIEF refreshing!
