There are many ways to prepare and consume hot dogs, and I enjoy the entire spectrum. Give me a grilled dog, an air fried dog, a split or spiraled dog, a Costco dog, or a chili dog. I will eat them all. I do, however, have a special place in my heart and stomach for dirty water dogs.
Dirty water dogs are those classic, iconic hot dogs you get from a cart on the street, usually in New York, though not exclusively. (My favorite dirty water dog cart growing up was run by a man named George who hung out near the Church of Scientology in Los Angeles. Great hot dogs; interesting location.) The dogs are cooked and held in a vat of salty, seasoned water, and they are plump, juicy, and infused with flavor. But you don’t need your own cart, or even a large vat, to give your hot dogs a dirty water vibe.
I’ve made a sous-vide version of these before, but you don’t need that fancy of a setup to enjoy this infused frank. (It’s a cool party trick, however, if you want to make a whole bunch for a crowd and keep them warm for a few hours.) All you really need is a big pot, some red wine vinegar and a few choice seasonings, an optional pinch of curing salt if you want to mimic the “extracted nitrates” the dogs are exposed to in the vat, and—of course—some hot dogs (just make sure they’re not skinless).

If you MUST boil your hot dogs, it is hard to beat beer. It can even be cheap beer. (Tuborg was my go to back then, $1.79/6 pack, 1985)
I used to like them when they were leftover, and my granmother would fry them in butter or bacon grease to heat them up again.

My “dirty water” recipe is half a beer, some sauerkraut juice, fill the rest of the way with water and sprinkle in some black pepper corns.

I put about 1/2 inch of water in the pot and salt it liberally, bring that to a boil, then put the dogs in and turn it back down to a low simmer and cover the pot and let them steam in there for maybe 20 minutes, turning them over once or twice. Makes a pretty good imitation of that hot dog cart flavor and consistency.

No, don’t boil them, simmer them. Slow cooking almost any kind of meat makes it better, but you have to be careful about how you do it, because boiling almost anything for 30 minutes will just turn it to mush.
Also if you are simmering meat, a lot of the seasoning in the meat can leech out into the water. But if the water is thoroughly salted already, then it cannot absorb much more salt from the meat, so you won’t lose that flavor.
NYC has some wonderful street food.

I can’t stand brats and boiling in beer doesn’t help a bit.
Best dog I’ve eaten is a Nathan’s Kosher Beef franik ... the proper steaming of the bun is important, too.
