Panera tried this at a few locations, with predicable results. Needless to say, they don’t do this anymore.
I am conservative thus strongly believe in trading value for value. However, I totally would have eaten there specifically to stiff them thus teaching them a valuable lesson

They didn't understand their market. The largest number of diners would pay good money to avoid having to eat lentils for dinner alongside vagrants. Next largest group are the vagrants who would eat lentils, but would not pay for them. Smallest by far is the group who would pay good money to actually eat lentils for dinner alongside vagrants.
If they ran the business as a real restaurant with a pot of lentils available for vagrants out back with the promise that they stay in the alleyway, they'd still be in business.
