There is a guy on youtube that tests different scenarios on himself to see what spikes blood sugar. He tested this theory and the difference between the spikes was not very much. Both spiked his blood sugar significantly.

There may be some long term benefits to resistant starches. And different people may have different results. If you're going to try to eat cooled potatoes, you should do the blood sugar check on yourself.
