Resistant starch increases if potatoes are cooked ahead of time, cooled and reheatedThere is a guy on youtube that tests different scenarios on himself to see what spikes blood sugar. He tested this theory and the difference between the spikes was not very much. Both spiked his blood sugar significantly.
