If you don’t space your seed potatoes far enough apart (white or sweet) they will graft their flesh together under the soil. What she’s got is easy to make. I had sweet potatoes the size of elongated basketballs one summer when I was lazy and just planted them six inches apart. Harder soils also helps ball them up into one giant.

That isn’t a single potato but a potato mass. For some reason all the potatoes on that plant grew together into a single mass. I’ve seen it before but not nearly that big.
