Actually, You Don't Need to 'Shock' Hard-Boiled Eggs in Ice Water (just in time for Easter)

Common kitchen wisdom dictates that hard-boiled eggs must be “shocked” in an ice bath to stop the cooking process and make them easier to peel, but only half of this is true, and the other half can be easily mitigated, meaning you can leave the ice in the freezer.

Plunging hot eggs into a bowl of ice water has absolutely no affect on their peel-ability. I know this because I have recently been cooking and eating a massive number of hard-boiled eggs, and nary an ice cube has been used to accomplish their peeling. The only water temperature that affects eggs and how easy they are to peel is their starting temperature, which should be boiling; starting eggs in cold water and bringing it to a boil bonds the eggs to the membrane, which makes it extremely hard to separate from the shell. Start your boiled eggs in hot water, and you won’t have this problem. (The only exception to this is pressure-cooked eggs, which are also super easy to peel)

When I was a kid, my mom would make soft-boiled eggs like this: Put 1 teaspoon apple cider vinegar into a bowl. Cut up a slice of toast into cubes, about 1/2 inch and add to bowl. Empty soft-boiled eggs from shells into bowl, salt & pepper, mix it all up. YUM

Ditto. I was given one of those Hot Pot cookers a few Christmases ago, and found that it will hard-boil a dozen eggs perfectly. I set it on low pressure for 3 minutes.

Also a little vinegar added to the water keeps broken eggs mostly in their shell.

Buy a dozen eggs and do an experiment.

I typically put the eggs in boiling water myself, I find the optimum time, not in the article, is 12-15 minutes. I think run cold water for a few minutes and peel. I have heard "older" eggs peel better but have not done any statistically significant experimentation on that.

For the grandkids. When coloring your Easter Eggs, put them in a wire whisk and dunk them.

Has anyone here ever eaten Turkey eggs?
I haven’t, but would like to get hold of some and experiment. I’ll bet even the eggs will have a Turkey essence of flavor.

Dropping eggs in boiling water is a great way to rupture the shells and make a mess.

Not hard boiling fresh eggs but let them sit in the refrig a few days works for me.

I like boiled eggs.

Nice and portable.

husband refused to eat them unless they are deviled.

And then..... the carnage... the horror. I swear he can eat all 24 in under two minutes.

I have a cuisinart egg maker....Ok..Ok.. don't laugh, but it's a great little appliance. IN addition to the hard boiled eggs cooked to perfection each time, are egg bites and omelettes. Makes a great gift to yourself or others.
