Actually feeling about same but trying hard to hold my own here at Jenny’s place and contribute the little bit I do.
The three cheese potato pancakes is a recipe I developed. As with most scratch cooking, the prep takes longer often than cooking. I hand grate 3 medium potato - skin on, well scrubbed. Do the soak in ice water (in todays weather, that means out on back porch for an hour or so) and then the squeezing out of liquid.
Add to a new bowl 1/2 medium sweet onion hand grated(somehow this adds more flavor/liquid to the pancakes) rather than chopped. mix with two whipped eggs - I do jumbo, Seasonings to taste (experiment with herbs). add the aqueezed dry potatoes. 1 and half cup of cheese. I always do a mixture of three and always hand grate. The pre-grated cheeses are easy but because there is an additive to them so they dont clump, they also dont melt as well. I pick from a variety .. sometimes leaning mexican, sometimes Italian & now and then totally unhealthy but wonderful velvetta alone. If you like fire add some Texas pete or hot pepper flakes. Add enough flour to make it not runny. Dont over mix. NEVER use a mixer. Just hand.
Cooking method impt for great potato pancakes. Use a combo of butter and oil.. I usually use olive. make sure the oil is quite hot. I cook on Med/high. you want them to brown nicely on outside and be tender and softer on inside.
Serve with various things.. If youve made it with Mexican seasonings and cheeses, serve with sour cream/french onion dip, salsa and guac. If Itlaian oriented marinara mixed with sour cream is nice. If traditional we do the sour cream and apple sauce. my brother loves ketchup on his. I do a nice sour cream mixture with additions of Yum Yum sauce, horsy creamy sauce, etc. Again experiment.
One of my favorites was sour cream and poppy seed. Sweeter and different but tasty with applesauce on side.. Now and then I add crumbled well cooked bacon to Jennys. Mixing a bit of coarsly chopped good quality dill pickle to a sour cream is a nice alternative.
Well this potty break turned into the Dolly cooking moment... LOL

No water in camper or cabin so we’re experiencing our own Forty Days in the wilderness. Carrying water for bathroom. We are nice and warm and have some cell service.
God is good. He has NOT deserted us.

From the looks of the weather satellite, the big ol' storm giving us this has just camped over Northern Sask/Alberta but I don't blame Canada for it. (Spent a winter up around Calgary and figger they're a bit chilly now as well, eh.)
Do kinda feel sorry for our "newcomers" ain't had prior experience with this stuff. Can't find a snow blower for sale and snow tires/chains/wiper blades go off the shelf like toilet paper.

Another ‘man walking the streets of DC’ video showed up in my YouTube feed this morning. I need to go find some cute kitty videos or something to watch! LOL
Never seen this person’s YouTube channel either, but sounds like he might live in DC. The video looks to have been made on February 8. He started the video by showing Marine One landing on the WH lawn; he also showed the decoy that travels with it. I noticed on top of the WH roof what looks to be 4 or 5 people walking around; I assume those to be the sharpshooters that guard the WH.
Then he goes walking along, pointing out various historical buildings. One interesting thing he points out is these old DC police call boxes along the street. No longer used but still there. He said artists paint an insert related to the history around the area of that call box and insert them. He showed a couple along his walk. Pretty neat.
He passed some police or military with riot shields walking down the street. He walked around to the back side of the WH because he had a lot of requests to see the construction going on. He showed the final remains of the inaugural grandstand where they’re tearing it down. Looking at the live feed there’s still a bit of the skeleton left. Then he went on around to the Mall itself.
It was pretty interesting. I might look up some of his previous videos.

Yes, watching news is bad for your health. Especially these days. I haven’t even watched Newsmax in a week. Supposed to get to 40° this afternoon so I’ll go get cat supplies.
