Look’s like lysie took the easy way out and did a breakfast casserole. LOL
I always have a hard time with Christmas breakfast. You want it to be special because it’s Christmas, but you don’t want a big breakfast because it’s Christmas!
One of my aunts would have Christmas breakfast instead of Christmas dinner. All her adult kids would come along with the grandkids to open presents; she would fix eggs, biscuits, gravy, fried potatoes, country ham, sausage, bacon, grits, fried apples, homemade preserves.....I swear Cracker Barrel modeled their biggest breakfast after her Christmas breakfast!

Sometimes it’s called Texas caviar. Cowboy caviar is made with black-eyed peas and black beans, chopped tomatoes, corn, bell pepper, onion and cilantro tossed in a tangy Italian dressing. I’ve seen some versions with avocado, but I think that one should be called California caviar. LOL
Think of it as a cross between bean salad and salsa. You eat it as a dip with corn chips.
No relation to mountain oysters!
The Scrooge with Finney will be DVRing today (Or dud last night), so I’ll watch it with a mug of something hot!
It’s 18 right now, 6” of snow on the ground.

I think your aunt had it right. Get the cooking over with and get to relax the rest of the day.
I bought a spiral ham so we’ll be having that later, although I could have made it for breakfast... scalloped potatoes, I’m thinking Portuguese sweet rolls. And of course the obligatory vegetable.
