Hello to all my friends here and some catchup
Exit and NIKK.. thank you both for sharing your stories of challenges of growing up in a dysfunctional family and the path you took - especially a spiritual encounter with our Lord - to help get you back to as much a normal life as possible. When I read both of your stories (and knowing how much you share) I see you as one of many - like those in the old and new testament - that God found. Broken, imperfect and hurt.. but perfect for his challenges and work. You both fit that to a tee. Bless you both and again, it takes some comfort, trust and security to share these stories. I appreciate it and I know others here do also
Ms. B... I posted on Facebook (on my wall and on the Free Republic group) the pix of the Texas cowboy shoot where you and I face to faced.. many years ago (maybe 9?). Im having a hard time getting links etc... About given up on my mac book pro and as most of you know, all is more difficult when using a phone.
Cotton, Rusty, others with eye issues. I appreciate you including me in the commentary on eyes. I am doing most of what you all do. I do use eye drops several times a day and lutein and the parma products. My only different addition is adding a saffron product (pricey) I found on line. I have about a months worth left. Not sure it is helping - maybe. I also make sure I do not use my phone without my glasses on that have the protective coating .
Health has been up and down. Back profoundly worse. MRI confirmed worse results than exrays. My scoliosis takes a 90 degree jut. pushing herniations and pressure on nerves. Surgery option would not relieve pain - which is extreme - but would take pressure off the herniations. Decisions.
Also past 4 or so weeks have had AFib symptoms. Getting more severe. Hope to get to cardiologist Monday to get evaluation. Worse scenario is a couple days in hospital to get regulation.
My brother arrives in town this next week. Stays at hotels any time they travel anywhere. Like privacy and dislike pets (alleges) and almost everyone has pets. He always tries to get here for my birthday (or around about) which is Nov 6. I plan to have them over for breakfast and dinner Thursday. In between he has a long list of “honey do” for our condo. Not his favorite thing. Several years ago they sold their wonderful home and moved into a rental apartment. Quite nice but he just hated the yard work and home repairs.. so he is doing a bit of a sacrifice to do my list..
Breakfast.. will be deluxe scramble eggs. Platter of bacon, ham, sausages, Baked beans (we love them for breakfast) These potatoes in recipe below and these rolls:

Dinner Shrimp coctail; garlic-cheese mashed potatoes, green beans amandine and this chicken dish.(recipe below) Purchased chocolate mousse. relatively easy menu to throw together night prior.. The potatoes for breakfast and crescent rolls made assembled night prior.
Neither of them are much of drinkers.. He likes Arnold Palmers and she usually does water.
Inviting my friends from Amish country ... husband and wife. she is 65 and he is 8o. She and my brother were kinda a couple as early teens. Also inviting my music man friend who is close with all of them. Jenny will be home from work at 2 or so. Hoping to keep her from passing out before dinner at 5 .. LOL.. really not funny but the reality of life.
My mac book pro has been dismal and I have just been using my phone.. so have not listened to any rallies but have followed on this thread and Nikos rally threads. Share on FB certain amount. Facebook is such an easy platform to use on phone. Too bad they are so politically warped.

Hashbrown Casserole
Ingredients
30 oz frozen shredded hash brown potatoes thawed
2 tbsp olive oil
1 yellow onion diced
3 large garlic cloves minced
1/4 cup all purpose flour
2 cups whole milk (can use reduced fat if needed)
1 cup chicken stock
1 cup sour cream
8 oz shredded sharp cheddar cheese
1 1/2 tbsp minced parsley (can use dried parsley if needed)
salt
fresh cracked black pepper
1 cup shredded sharp cheddar cheese topping
Instructions
Preheat oven to 350 and grease a 9x13 casserole baking dish.
Preheat medium pot over medium heat on stove-top.
Add oil, heat it through and add onions. Saute onions until they start to brown.
Smash and mince garlic and add it to the onions. Stir and saute until fragrant.
Sprinkle flour over the onions and stir well. Stir for a few seconds and start slowly pouring in chicken stock, while stirring. Pour in milk after that while stirring as well.
Let the mixture heat through and start to thicken.
Stir in sour cream, cheese, salt, and pepper. Let the mixture cook and thicken as the cheese melts. Taste to make sure you have enough seasoning.
Stir in parsley.
Mix hash browns and cheese sauce in a large bowl and spread the mixture in the prepared casserole dish. Make sure it’s all spread evenly throughout.
Spread some more cheese on top and bake for 35-40 minutes, until casserole browned and bubbles around the edges.

Heavenly Chicken
Chicken (I use boneless skinless thighs, but breasts would work)
Dredge in sour cream seasoned with garlic powder, salt and pepper. Roll around in crushed Ritz crackers. Put on baking sheet. Drizzle with melted butter. Bake 425 for 45 min.
LOL That was a long ‘un.
Also the first one in about 6 hours, it seems.
