Email news this week brought this Betty Crocker recipe for Ravioli Casserole that looks very good for an easy, work-night meal made partly from prepared foods:

That is the milk I use for making cheese.

Makes some of the best cottage cheese you ever ate.

Going to have to wait for a year to find out how the hard cheese turned out.

Heck yeah, I can be bought with food!! Come with us! My child’s school is kind of “on the way” to Malibu so we just decided to experience the 20 degree Fahrenheit temp drop. This 110 stuff makes me literally sick, like I have the flu, it’s awful. And the whole “it’s a dry heat” just doesn’t make it any better.

Ludo is one of the cutest French men! I lived there for about 10 years and was never attracted to any French men I met... But Ludo is not bad!

Yes, heat can be brutal. We live in MS & sometimes the heat & humidity are overwhelming. It can totally give you a flu like feeling. Stay cool! I’m still coming ; )

(Speaking of dry heat..... My brother was recently in Phoenix for his job. He thought the dry heat thing was a scam. He said the heat just made him sick. )

Each year, my brother brings me a gift of thick cut cold smoked pork chops. I make this dish for him. I have also used regular thick cut chops-also very good:

Yes, the humidity in the south is like a swamp or a stew, but the dry heat is like an oven or a volcano. It isn’t pleasant either way! Next week it cools down to the 90s! Yay?!

Oh he is cuter and more funny than I remember! I adore ratatouille but I’d want a fully fried egg rather than poached. The chef, ooh la la. I’ll take him poached or fried, mais malheureusement il semble hereusement marié.

Great recipes just up my alley today.

Question: I have been through 3 instant read thermometers in the last 4 years. Anyone have a recommendation?

Also, with all the appetizer recipes last week, I didn’t see offers of good cold appetizers that can be prepared well before company comes. Anybody have any crowd-pleasing ones out there?

That casserole looks good - I am looking for ways to incorporate a little spinach into meals.

I have a homemade hamburger helper mix recipe:

1 1/8 Cup Powdered Milk
1/2 Cup + 1/2 Tablespoon Cornstarch
3 1/2 tsp minced onion
1 heaping tsp garlic
1 heaping tablespoon dried parsley
1 1/2 heaping tsp. each Basil, Thyme, Black Pepper

Store in Mason Jar to use as needed.

Use 1/4 cup of mix for 1/2 lb. hamburger. Vary the spices according to what you want. This will make 4 meals/recipes for 2-3 people.

For Example:

Chili Tomato Mac:
After browning the Hamburger, Add 1 can tomatoes, 1/2 - 3/4 Cup macaroni, 1 1/2 Tbls Chili powder 1 tsp Paprika, 1/4 tsp sugar, salt or beef bullion to taste.

Once the pot is simmering nicely, combine 1/4 cup of mix with 1/2 cup water with a whisk to get it well combined and then whisk it into the skillet.

This takes about 12 minutes to cook, once you get the ingredients into the skillet, after the meat is browned.

This is half a recipe for both the mix and the meals, now that it’s just the two of us.

Another flavor:

Stroganoff:
1/2 lb. Hamburger
1 cup egg noodles
1 cup water
1/4 cup mix
1/4 cup sour cream
Salt or beef bullion to taste.
Cook and drain hamburger, then combine all except sour cream. Simmer 20 minutes till noodles are done.

Now, I don’t keep egg noodles around from the store any more, because they go bad before I use them - due to carb content and smaller family size. So when I want egg noodles for something, I just make my own. Half a recipe below:

1 cup flour
1/2 tsp salt
1 egg
Milk as needed (1-2 Tbls)

Combine flour and salt. Make a well and add the egg and milk. Begin whisking the egg until it’s mixed with the milk and then gradually incorporate flour till you have a stiff dough to knead. Knead it for about 5 minutes. Let the dough rest covered with damp cloth for 30 minutes. Some people like to oil the dough and then let it rest.

Roll the dough out and cut strips with a pizza cutting wheel. Spread out or hang to let dry for 2 hrs. Use the dehydrator if desired to get it drier still.

Hint: a cutting board covered with a “flour sack” towel and sprinkled with a bit of flour then smoothed out with your hand is the best thing to use to roll out dough!

Fast Food at home without the preservatives. LOL

I still make butter. It is so easy. My hand mixer fits inside a large pickle jar, so I pour the heavy cream in the jar and let ‘er rip for about 7 minutes. I’m working on finding a way to support the mixer so I don’t have to stand there waiting for results, although it’s a good time to pray or sing, if you can’t sing in tune. Squeeze out the buttermilk for another use and then pour cold water in the jar, squeezing the butter to rinse off the remainder of buttermilk. The buttermilk will turn rancid, so this is an important step. Add a dollop of plain Greek yogurt for a cultured flavor and a tiny bit of salt. A little goes a long way.

Sometimes I add herbs. We particularly like dried basil or dill weed. I know some people add cinnamon sugar, too. I frequently bring seasoned butter as a hostess gift when we’re invited to someone’s for dinner. It makes a unique and appreciated gift.
