For the past 10 years, bread has been under attack.
Professor Zhou Weibiao, a food scientist at the National University of Singapore, isnt wrong.
According to current nutritional thinking, white bread is digested too fast, spikes blood sugar levels and is linked to obesity.
In short, its the enemy of healthy eaters.
Weibiaos answer to this problem? Hes invented a purple bread.
Rich in cancer-fighting antioxidants, digested 20 percent slower than regular white bread and made entirely of natural compounds, it could be the first superfood of the baked goods world.
The great bake off
A long-time staple food, breads big problem is its high glycemic index: its sugar content speedily gets into the blood stream, causing blood sugar levels to peak and crash.
Furthermore, its rapidly digestible starch content means people often eat more of it than they should.
The challenge was to see if we could change the formula of bread without changing the smooth texture of white bread that people really love, Weibiao said.
He decided to extract anthocyanins from black rice which give the grain its much trumpeted antioxidant qualities and infuse it in his bread.
Weibiao left behind the rices starch properties.

Agree 100%, also from a cultural/societal aspect.
The concept of a universal panacea (”Superfood”) to cure what ails us is emblematic of our laziness as a culture.
I would FAR rather live my ice cream and cognac lifestyle and then mitigate with a “superfood” than eat responsibly.
I’d go into detail but I’m about to find out that One Weird Trick to reduce body fat.

I agree, but I believe that it is somewhat more devious than that. Take a look at the following trends and ask what do they have in common?
Thomas Malthus
Legalization of Abortion
Legalization of Euthanasia
Forced Sterilization
The Pill
One Child Policies
Socialized Medicine
The Food Pyramid and the ostracism of meat
Gay Rights
Agenda 21
The advent of Condo's
Governments refusal to "build out of congestion" on the freeways and the push for light rail
The global warming hoax
Planned Parenthood
Superfoods
Vegetarians
Perpetual war
These are all strategies to address population growth. Some, which involve outright killing such as abortion, euthanasia, perpetual war, planned parenthood and socialized medicine (not providing care when it gets too expensive) address it by directly reducing the population.
Some involve limiting reproduction either thru coercion or cooption. These would be forced sterilization, one child policy, the pill, gay rights. (convincing people to have homosexual sex ensures they don't breed).
Some are designed to increase density of people, to make them easier to control and maintain as much arable land as possible. This would include Agenda 21, the development of Condo's, the refusal to build out of congestion and light rail, and the entire global warming hoax.
Finally, you have the conversion of people from our natural diets to modern diets. This is so that foods that we historically did not eat would be used to substitute for foods that could be grown/raised/spawned/manufactured from non-traditional food growth areas. This includes the food pyramid (designed to move us away from protein), the ostracism of meat, vegetarianism, and the birth of "superfoods".
I had an interesting talk with my mother the other day. She is now in a nursing home and she was complaining about all the Kale they are feeding them. I told her it was the new foo foo food, and everyone was making it out to be this great thing ... and her response was kind of a WTF!!! When she was a kid, Kale was what the poor people ate because they could not afford lettuce. Compared to lettuce it has a lousy texture, it tastes bitter, and is generally a poor substitute for lettuce.
Quinoa is similar ... designed to replace buckwheat, it is low in protein (only 14%), inflammatory and hard to digest.
