"We’ve always used butter, olive oil, coconut oil and whole milk."

I'll pipe up here with a defense of skim milk. Milk is healthy but loaded with calories. Skim milk has about half the calories of whole milk and even more protein. (which is what I drink it for). Basic physiology still dictates that to maintain a lean physique, we must burn as much or more calories than we take in. Skim has all the nutritional content, more protein and half the calories - for someone who drinks a lot of milk (and doesn't mind skim) it makes a lot of sense.

However the fat in milk is what enables you to break down the nutritional content.

It is sort of like people who advocate raw foods, yes they have more nutrition but it is of no use because you body can not access them.

Cooking reduced the nutrients over all but raises dramatically the number of nutrients your body can access which makes the food better for you.

That’s true but my point was you need fat in your diet. You may not be getting it from (skim) milk but you’ll still need some from “somewhere” (at this point in our lives we almost only use milk for cooking and in our coffee). ;- )
