Soft, stinky, blue, raw and fresh. No, not oysters; rather, different types of cheese. With evidence of production dating to 2000 B.C. in Egypt, cheese was likely invented by accident when milk was transported across the scorching desert in the cleaned-out stomach of an animal (an ancient milk jug). Milk + Heat + Acid = Cheese. While it can be made from yak milk in Iceland, or moose milk in Sweden, local turophiles should be thrilled that some of the world's best cheese can be found right here on the West Coast.

Tillamook Cheese does not make a special competition cheese as many others do. That is a factual statement. Wines, and beers are similarly competed with special production for competition. My inside source (Tillamook)does not know if Cabot cheese made a special competition cheese. Only Cabot knows. Ask them.
Cabot cheese is obviously a fine cheese. Denigrating Tillamook cheese does not make cabot a better cheese.
Tillamook cheese is a co-op of small family farms.

Cheese making is fun and easy but it takes a lot of milk to make a little bit of cheese.
I see you are a local to the company...keep up the fight in that neck of the woods. It appears some stinky old hippies run the Cypress Grove Cheese company. Often I wonder if that vegetable ash the put in their cheese is actually ashes of some of Humboldt’s finest;-)...Wonderful cheese though.
