There was a thread recently about February being 'National Pie Month', here's a list of upcoming 'Food' Holidays for the month of February and this week:

February: * Canned Food Month • National Cherry Month • National Snack Food Month • Great American Pies Month • National Grapefruit Month * National Potato Lovers Month • National Hot Breakfast Month • North Carolina Sweet Potato Month • Berry Fresh in the Sunshine State Month • Return Shopping Carts to the Supermarket Month

* January 29 - National Corn Chip Day * January 30 - National Croissant Day * January 31 - National Brandy Alexander Day * February 1 - Baked Alaska * February 2 - Heavenly Hash * February 3 - Carrot Cake Day * February 4 - Homemade Soup Day

(Food producers and manufacturers will most often direct their marketing and advertising to these 'holidays'. Supermarkets will have more 'canned food' sales, put their pies on feature price, etc. Something to look out for when making shopping/meal prep lists)

I have a low-level recipe I created — great for breakfast or lunch and easy to do...

Want it? I have always wanted to share it.

Does anyone have any comments on the Materbuilt electric turkey fryers?

For years Mrs p6 and I have deep fried turkeys with our propane one, but last year we moved to an apartment because the house was too much for us. Obviously we can't use the propane one here. It will be used only for family gatherings at the kid's houses or other special events.

So we've been looking at the Masterbuilt fryers and other brands and wondered if they are as good or if there are any problems.

We are aware of the 12-14 lb limit but for us that isn't a problem.

Just passing through on my first visit to this thread, but I'll toss out a couple of things:

1. I just found out that making bacon in the oven is the ONLY way to go. Simple, Clean (using parchment paper) and perfect every time. I just lay them out flat on the pans and put them in at 375 for 10 minutes or so. The longer the crisper.

2. Tonight I'm trying a recipie for Orange Chicken which I found at http://www.food.com/recipe/panda-express-orange-chicken-103215 which all the hundreds of commenters seemed to rave about.

Gotta go. Time to make brownies with my 6YO daughter. Thanks for letting me visit!

Happened to make a killer dish on a whim last night. My wife is low carbing but was dying for potatoes or such so I went with turnips.

Small diced turnips, choppped onion, pepper and topped with gruyere and cotswald cheese. Bake at 350 until cheese browns.

It was delicious. There were leftovers of steak, but not the turnip dish.

Greek Style Chicken

Place a cut up frying chicken in a baking pan. Add peeled and cut up potatoes around the chicken and salt and pepper both. Place 6-8 peeled cloves of garlic around the chicken and potatoes. Combine the juice of 2 lemons, about 1/3c olive oil, 1/2c of water and 2T oregano. Pour over the chicken and potatoes and bake at 350 for about an hour until the chicken and potatoes brown slightly. You can baste the chicken and potatoes with the juices during baking if you want.

When I need to fix something quick and easy with minimum cleanup for my wife and I, I brown a pound of Italian sausage and then add a can of pizza sauce and some caraway seeds. Let it cook until the sauce cooks down and use it to fill sliced hoagie rolls. Top with lots of shredded mozzarella, some sliced black olives, and pepperoni slices. Slide under the broiler until the cheese melts and starts to brown.

Have a glass of Lambrusco with it, and enjoy.

Now, does anyone have a good, authentic Goulash recipe?

(Oh, and PLEASE add me to the ping list... THANKS!)

Mix all, put in pie crust.

Mix:

Sprinkle on top, bake 1 hr @ 400 degrees. Can bake in a grocery paper bag, or put foil down to catch the drippings.

With February being pie month, I thought maybe these would be good for posting. The nice thing about these pie crusts is NO shortening or lard so NO TRANS FATS to clog the arteries.

Pat In Pie Crusts
1.
1/2 cup butter or margarine
1 cup flour
1 tsp sugar
1 T vinegar
2.
1 1/2 cup flour
2 T sugar
1/2 cup vegetable oil
2 T milk

1.  Mix well with hands or fork.  Pat in 9 inch pie plate.  When crust is patted in, sprinkle with 1 T vinegar.
Bake at least 30 minutes at 350.

                                          OR

2.  Combine first two ingredients and sift into pie pan.  Mix next two ingredients thoroughly and pour on top of flour; mix together.  Press into pie pan with hands.  Bake 15 minutes at 425.

I've used the first one for Dutch Apple Pie.

Dutch Apple Pie
1 your favorite homemade pie crust or ready-made pie crust
6 cups peeled cored sliced cooking apple, Granny Smith
1 tablespoon lemon juice
1/4 cup granulated sugar
1/4 cup brown sugar, packed
3 tablespoons flour
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Topping:
3/4 cup flour, or Old Fashioned Oats
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup butter or margarine, room temperature

Preheat oven to 375°F.  Fit pie crust into pie plate.

In a large bowl, mix sliced apples, lemon juice, both sugars, flour, cinnamon and nutmeg.  Pile into crust. Prepare topping:  In a medium bowl, with a pastry blender or a fork, mix flour, both sugars, and butter until coarsely crumbled.  Sprinkle evenly over apples.  Bake at 375°F for 55 minutes.  Serves 8

For you Indian food lovers, this is pretty easy. Once you marinate and grill the chicken skewers, the rest is very fast.

Ingredients:

***CHICKEN:***
2 cups yogurt
1 teaspoon finely chopped ginger
1 teaspoon finely chopped garlic
1/2 teaspoon red chile powder
1/2 teaspoon garam masala (see Note)
1/2 teaspoon salt
2 teaspoons vegetable oil
1 pound chicken, cut into cubes

***SAUCE:***
1 teaspoon vegetable oil
2 teaspoons chopped onion
1/4 teaspoon finely chopped ginger
1/4 teaspoon finely chopped garlic (I grate mine)
4 cans (8-ounce size) tomato sauce
1/4 teaspoon ground cumin
1/4 teaspoon garam masala (see Note)
1/4 teaspoon red chile powder
1 cup (or less) heavy cream
1 teaspoon chopped cilantro
Salt to taste

Directions:
For chicken: Mix yogurt with ginger, garlic, red chile
powder, garam masala, salt and vegetable oil. Add the
chicken cubes, mix well, cover and refrigerate for
several hours or overnight. Place marinated chicken
cubes on skewers and cook over charcoal. Do not
overcook, as the chicken will continue cooking in the
sauce.

For sauce: Heat the oil in a saucepan over medium-low heat.
Add the onion, ginger and garlic and sauté for 3 to 4
minutes. Add tomato sauce, cumin, garam masala and red
chili powder and simmer for 15 minutes, stirring
occasionally. Add the cooked chicken and cream and cook
over medium heat for 5 minutes. Stir in fresh cilantro.
Add salt to taste.

Note: Garam masala is available at many grocery stores and at any Indian market.

I asked this question on this weeks gardening thread...

Any ideas how to safely cut up a really hard winter squash? I came close to killing myself carving one a bit ago with a large kitchen knife and just missed a big vein in my hand and I’m a bleeder due to the aspirin I take. I have taken them out in my shop and used a jig saw to cut them in the past...

I am looking for a recipe that is a dip. My daughter is having some friends over for a Super bowl party and the dip would be fabulous. If I remember correctly, it has guacamole, diced tomatoes, olives, shredded cheese etc... and is layered. I would appreciate any recipes! Mom
