Yes, You do DO a mean shoulder. Tell me please, does smoking them get the grease out of ‘em?
No..the “grease” or fat is the best part actually..its what makes em nice and tender and juicy.
You know I smoke mine for many hours then finish them off in the oven or on the grill, wrapped real tight in foil...by the time its finished you have real nice juices that the roast is swimming in.
I use vinegar injection in mine and it gives it that nice almost Carolina flair
Humm, never thought of vinegar injection - well, never heard of it. I’ll bet it’s wonderful. Mr HOB and I love recipes that use vinegar.

During the meeting, the three inform the Devil that they would like to be able to check up on their homelands. The Dark Lord agrees: each is granted one phone call.
Mr. Putin calls Russia and talks for five minutes. The Devil tells Mr. Putin that the call was $5 million. Mr. Putin makes out a check.
Mr. Blair then calls Great Britain, and has a 30 minute conversation about a variety of things. The Devil asks for and Tony Blair gives him, a check for $30 million.
The Lord of Darkness then grants Mr. Bush his phone call. Mr. Bush talks for an hour. The same terms apply, Mr. Bush is to reimburse the Devil for the cost of the call. "Sixty dollars," the Devil says.
Mr. Putin immediately protests: why are we charged so much while Mr. Bush has to pay so little?
"Well," the Dark Lord remarked, "once Obama got done with the United States, it became a local call."
