Yes, You do DO a mean shoulder. Tell me please, does smoking them get the grease out of ‘em?
No..the “grease” or fat is the best part actually..its what makes em nice and tender and juicy.
You know I smoke mine for many hours then finish them off in the oven or on the grill, wrapped real tight in foil...by the time its finished you have real nice juices that the roast is swimming in.
I use vinegar injection in mine and it gives it that nice almost Carolina flair
