Did you hear about the guy that lives on nothing? No seriously, he lives on zero dollars a day. Meet Daniel Suelo, who lives in a cave outside Moab, Utah. Suelo has no mortgage, no car payment, no debt of any kind. He also has no home, no car, no television, and absolutely no “creature comforts.” But he does have a lot of creatures, as in the mice and bugs that scurry about the cave floor he’s called home for the last three years.

To us, Suelo probably sounds a little extreme. Actually, he probably sounds very extreme. After all, I suspect most of you reading this are doing so under the protection of some sort of man-made shelter, and with some amount of money on your person, and probably a few needs for money, too. And who doesn’t need money unless they have completely unplugged from the grid? Still, it’s an amusing story about a guy who rejects all forms of consumerism as we know it.

13. Peach Freezer Jam [14]: This fruit spread-style peach jam can be made with no sugar at all, but we use 1 cup sugar for just a touch of sweetness (up to 3 cups sugar can be used for a sweeter jam). Recipe from Eating Well.
14. Concord Grape Freezer Jam [15]: Concord grapes have seeds and very sour skins; these should be removed in order to have a more edible jam. So after washing and stemming the grapes I placed them in a stainless steel pot and mashed them with a potato masher. Once I mashed out as much juice as possible I cooked the mixture until it boiled. 15. Sugar Free Poached Pear and Pineapple Freezer Jam [16]: No cooking?! Yes! Even more exciting for putting away good jam quickly. The other side…we can just put it in the fridge and use it. 16. Raspberry Freezer Jam–Ball Pectin Method [17]: So, when she saw a new Ball brand pectin at the store, she decided to try it, so she can say she’s tried it all. It caught her eye because it uses a lower percentage of sugar, and also doesn’t call for corn syrup like many recipes do. The Damsel doesn’t have anything personal against corn syrup, but white sugar is cheaper and easier to measure, so, yeah. Recipe from Old School.
17. Carrot Cake Freezer Jam [18]: This is absolutely divine on hot biscuits, or for a different twist, try on cinnamon raisin bagel chips. Also, regular liquid or powder pectin will not work in this recipe—you must use freezer jam fruit pectin. Found at Inn Cuisine.
18. Reduced-Sugar Blackberry-Plum (or Raspberry-Plum) Freezer Jam [19]: Nancy Baggett likes to combine plums with berries because they add fruitiness and vibrant color, but no seeds. Plums are also rich in pectin, so they help ensure that the jam will jell well. Recipe found at The Washington Post.
19. “Raw” Berry Freezer Jam (Honey Sweetened) [20]: Sweet berries and raw honey are made into a brightly flavored jam that is raw and delicious! It’s the perfect jam for summer time. 12 Yummy Zucchini Cakes To Make: {Recipes}

I remember the first time I was offered a slice of chocolate zucchini cake (years ago) and thinking “this has to be a joke”–but after that first (tentative) bite, I was hooked! Zucchini provides a rich moistness to cakes that bakers can’t resist and I encourage you to try it if you haven’t already. This week’s Recipe Hit List is a collection of a dozen recipes I’ve found online that uses zucchini as an ingredient for a variety of different cakes–each one sounds so delicious! If you grow this vegetable in your garden, you’ll know that it gives and gives and gives some more…I’m sure you’ll have lots on hand to give each recipe a try . Enjoy!
Zucchini Cake Recipes

Try This Lovely Zucchini Swirl Bundt Cake Recipe From alesandemily.com

1. Zucchini Swirl Bundt Cake Recipe [1]: (as seen in picture above) Anyway, whenever you get zucchinis (or if you have one left over like me) you need to make this bread – it will make your life a happier, more moist place. And as you eat the entire cake, just remember: it’s healthy : ) Found at Ale’s And Emily’s Travels.

2. Sourdough Zucchini Cake [2]: Yesterday, faced with my sourdough cast-off and some frozen zucchini I came up with the following recipe. It was pretty yummy if I do say so myself. I think a little sweet, spicy glaze would be awesome drizzled over the top. Found at Two Frog Home.

3. Lemon-Zucchini Pound Cake [3]: Now I got 2/3 of the way into making the cake and realized that I HAD NO LEMONS in the house so I substituted limes – I think it worked out very well. Found at Cook. Craft. Enjoy.

4. Zucchini Pound Cake [4] (with cinnamon sugar crust and vanilla cream glaze) This recipe adds a few things extra to actually put it over into the cake category, like glaze, and butter, and cinnamon and sugar. Found at SophistiMom.

5. Zucchini Double Chocolate Cake with Cream Cheese Frosting [5]: The orange juice and zest in the cream cheese frosting is a nice note against the chocolate -I think. You won’t even know the zucchini is in the cake once it’s baked- it just makes a nice, dark, moist cake. Found at The Feast Within.

6. Cinnamon Zucchini Cake [6]: This recipe is a family favorite. My mom and grandma used to make this recipe and it brings back sweet memories of enjoying zucchini cake on the deck together. From Finding Joy In My Kitchen.

7. Chocolate Chip Zucchini Cake [7]: This is my sister Beah’s zucchini cake recipe, and it’s the best. She gave the recipe to me once, years ago, but of course like the moronic little sister that I am, I lost it. She was nice enough to offer me a new copy, though, so I was able to whip this up just in time for her birthday. Recipe from Cast Sugar.

8. Whole Wheat Zucchini Cake [8]: This cake was maybe my favorite of all the experiments. It was really, really good (and by was, I mean that every last piece is gone). Of course I happen to think cream cheese frosting makes everything good! Found at Heavenly Homemakers.

9. Chocolate Coconut Zucchini Cake [9]: I decided to give the chocolate, zucchini, coconut combination a whirl. It was really worth it. I tried to make it as healthy as I could without sacrificing the flavor and texture that I crave!! I definitely believe that the taste of the cake can be determined by the taste of the batter. This cake recipe surpassed the batter taste test!! I dusted it with confectioner’s sugar before serving. Perfection. Found at CookWomanFood.

10. Zucchini Olive Oil Cake With Lemon Crunch Glaze [10]: A perfect summer into fall cake. The tail end of the almost never ending zucchini, the brightness of lemon, along with the depth of toasted walnuts, cinnamon, ginger and clove – and olive oil – the clincher. I’m a big fan of cakes made with olive oil. The concept unleashes my inner italian-ness. Found at Cook Eat Fret.

11. Zucchini Bars/Cake [11]: Now the recipe calls for cooking this in a sheet cake pan. I cooked it in a 9 x 13 dish and cooked 15 minutes longer. I’m sure this recipe would work if you substituted carrots for the zucchini also. Found at Real Mom Kitchen.

12. Chocolate Zucchini Cake [12]: This cake is rich, moist, chocolatey, fudgy, dark and… and… and absolutely delicious. This cake received uber-raves from all who tried it. There’s two full cups of grated zucchini in the recipe and not one person could tell… they all asked me if I was sure about the zucchini. Found at The Repressed Pastry Chef.

1. Bread & Butter Pickles [1]: (as seen in picture) A mini tutorial for anyone who wants to make the best, best, best, Bread & Butter Pickles! The recipe came from my Aunty Bonnie’s webpage and she’s tweaked it over the years to perfection She’s not exact with her measurements (must run in the family) so a little extra of this, or not enough of that, is okay. 2. Bread And Butter Pickles [2]: I was watching Tyler Florence’s cooking show on TV a couple of weeks ago. He shared a recipe for Bread and Butter pickles, which was so easy to make that I had to try out the recipe at home. I made a small batch and had the pickles after 2 days in the brine. 3. Classic Bread & Butter Pickles [3]: No Canning Required!) This recipe produces classic bread and butter pickles—the kind my mom used to make every summer when I was a little mouse. They’re sweet. They’re tangy. They have a fabulous crunch. Like my Quick, Fresh Pickles, there’s no canning required for these babies (in fact, they just need an overnight soak in the fridge). And, honestly, they don’t need to be canned. This recipe only uses about 4 pickling cucumbers. Your pickles will keep for a few weeks in the fridge—which is more than ample time to gobble them up. Home-Made Pickles: Half Sour, All Awesome [4]: I am still amazed at how easy it is to make these pickles – if you’re the kind of person who feels that no self-respecting deli should be without a barrel of brined pickles just begging to be fished out and sliced, you owe it to yourself to give these little guys a shot. The crunch and the bite of the pickles are a wonderful reward for doing it yourself, and the cost of the ingredients is still less than what you would pay in the store for a decent alternative to home-made. 5. Recipe: Half-Sour Dill Pickles [5]: This recipe makes the kind of mild, crunchy pickles you find on the tables of every deli in New York City. Proportions aren’t terribly important, except that you need to have enough salt and vinegar to make the brine, and enough brine to cover the cucumbers while they sit on the countertop for a day or two. 6. Refrigerator Garlic Dill Pickles [6]: These are not pickles you can put on the shelf in your pantry. Two days after you make them they have to go in the refrigerator and they have to stay there until you eat them. Found at dlyn.

7. Refrigerator Pickles And Banana Peppers Recipe [7]: They definitely taste closer to a dill pickle than the ones stored only in vinegar, and it’s worth the extra effort. I’m really glad that I threw the banana pepper in there – it’s much better than the heavily pickled store-bought ones! Found at Eat This.

8. Grandmother’s Refrigerator Pickles [8]: Refrigerator pickles are pretty easy though we had to go buy mustard & celery seed (I can’t believe a drawer full of herbs & spices & we didn’t have these). The pickles have to be stored in glass or crockery according to the recipe. We cleaned out a couple of empty jam containers & they worked perfectly. 9. Quick Spicy Dill Pickles [9]: They are refrigerator pickles — no heat involved. I know that this is the mildest summer I have ever experienced in Chicago, but it is still nice to not have to turn on the stove. Summer makes me lazy. 10. Refrigerator Pickles [10]: These were a hand-me-down recipe from his mother. And they couldn’t be simpler. Found at A Way To Garden.

11. Slightly Sweet Dill Refrigerator Pickles [11]: Substituting rice vinegar (instead of cider or wine vinegar) produces a pickle that’s less tart. Found at Epicurious.

12. Asian-Inspired Quick Pickles [12]: These pickles were delicious. They held onto a fresh crispness while still absorbing all that puckery vinegar goodness. Found at Food In Jars.

13. Broadway Deli’s Quick Dill Pickles [13]: These pickles taste just like the one’s grandma used to make, only they’re faster and easier to prepare. To transform bumpy little cucumbers into crisp, garlicky dill pickles, place all of the ingredients in a jar, cover, and shake. In four days you’ll have the best dill pickles you’ve ever tasted. 14. Homemade Kosher Dill Pickle Recipe [14]: for anyone who doesn’t think they can make pickles; don’t be worried. You can. Following Arthur’s excellent and very easy recipe, you’ll find making them is truly a no-brainer. Found at David Lebovitz.

Summer gives us a bounty of locally grown fresh fruit and what better way to enjoy it all than with a fresh fruit salsa! You can use the salsa in a variety of ways: a condiment for grilled meats, seafood and fish, a healthy snack (yummy with homemade chips–some recipes included) and even as a dessert topping. It’s easy to make too! This week’s Recipe Hit List features a collection of fruit salsa recipes I’ve gathered from around the ‘net, enjoy!

3. Fruit Salsa For Grilled Shrimp [3]: Use this as a basic recipe for fruit salsas—wonderful with just about any food, but particularly with grilled or sautéed fish or shellfish. For the chocolate chips, the original recipe uses 1tsp of chili powder. However, I decided to use cayanne pepper instead and decrease the amount to 1/4 tsp. Coffee cakes are definitely a comfort food for me–a slice is acceptable to have for breakfast, welcomed as a dessert or served with a cup of coffee while visiting with friends. They remind me of my Great-Grandmother who always had one ready to serve because you just never knew who would show up on the farm to talk about the latest town news and politics (in those days unannounced visitors were always a welcome interruption from the day’s chores). Coffee cakes were standard fare in the vintage kitchen and homemakers couldn’t find enough new recipes to try. This week’s Recipe Hit List is a lovely assortment of recipes I’ve found around the net–they all look so good it’s hard to decide which to try first .

4. Spiced Pumpkin Sour Cream Upside-Down Coffee Cake [4]: Thus, this cake now has a wonderful texture. 6. Meyer Lemon Coffee Cake [6]: Layers of thinly sliced Meyer lemons lend a mellow complexity to this otherwise classic coffee cake. This coffee cake keeps the crumb topping and spices it up a little more by using some of the same flavors that are found in chai, including cinnamon, ginger, cardamom and allspice. Peanut Butter Chocolate Chip Coffee Cake [18]: I see nothing about this cake that necessarily makes it a breakfast cake, but we’ll call it that anyway so that you can justify eating it to start your day This is a simple peanut butter cake with a peanut butter streusel topping and chocolate chips. Chocolate Chip Coffee Cake [19]: This one is chock full of chocolate chips (A LOT of chocolate chips). the cake itself come out super light and fluffy and it couldn’t be simpler to make. this is a great cake to slice up into bite sized pieces for a brunch, or you could do what i do – get a giant glass of milk, a few forks and dig right into the pan.
20. Sour Cream Coffee Cake with Chocolate Cinnamon Swirl [20]: The cake is moist and tender with swirls of cocoa and cinnamon and the crumb topping is exactly right—not too overwhelming but just gives that cake that extra crunch it needs. 21. Pineapple Coffee Cake [21]: Not only is this cake completely free of added fats, it also uses only whole wheat and oat flour–no white flour at all–and contains very little sugar. {Re-posted for July long-weekend}…I fired up the barbecue for the first time this year (the weather has been unusually nice lately) and now I’m on the hunt for this year’s first batch of potato salad–I’m looking for something new to try. This week’s Recipe Hit List is a great selection of recipes I’ve found around the ‘net, some even healthified! You’ll find old-fashioned favorites & classics mixed in with new twists along with hot and cold versions. Something here for everyone, enjoy!

1. Lemon & Herb Potato Salad [1]: (as seen in picture) I’ve never been a big fan of potato salads but I happen to really like this one. The key this potato salad is the lemon. Lemon adds just the right amount of freshness to the creamy dressing. I like to use red potatoes because the pink colour is lovely in this salad and there is no peeling involved. 5. How To Make German Potato Salad [5]: I always thought of this more as a cold-weather kind of dish. But someone suggested it to go along with kielbasi, and it sounded like a great idea. 13. Lemon Cilantro Potato Salad [13]: I created this recipe on the fly and really adore it. I can actually taste potato, two kinds, red and purple. This week’s Recipe Hit List was put together when I received an email request from Rebecca who just got a brand new bread machine and is now looking for recipes to try. There are so many delicious breads in this list and I really don’t know how you’re going to pick the first one to make . You’ll find herbed breads, sandwich breads and even foccacia, bagels, breadsticks, cinnamon rolls and monkey bread. Enjoy!

1. Bread Machine Monkey Bread [1]: (As seen in picture) As you can see, this is not the usual biscuits out of a can rolled in a ball, then coated with cinnamon and sugar kind of monkey bread. It’s so much better and easy too–if you use a bread machine. Recipe from Salad In A Jar.
2. Caramelized Onion Foccacia (Bread Machine) [2]: I love this recipe! It makes a really big foccacia so I usually make it as a main dish and just add a salad. I love using the dough feature on my bread machine because I can just throw in the bread ingredients. I also have a bread proofing feature on my oven which lets dough rise ~ and really well, LOL! 3. Cottage Recipe: Raisin Bagel Bread (Bread Machine) [3]: Whenever I make bread, I throw a few ice cubes into the bottom of the oven about mid-way through baking. Moister air just seems to make for nicer bread. 5. Portuguese White Bread [5]: This bread recipe is a no-fail bread machine recipe that I have used for years. The ingredients are so simple and it makes the perfect loaf of bread every single time. Recipe from Mom Advice.
6. Easiest Zucchini Bread Ever [6]: If you don’t have a bread maker, I would recommend putting all of of this into a food processor or blender because you really want the oats to be chopped up pretty fine to make the texture of this bread nice. Recipe from Mommy’s Martini.

Focaccia Bread Bread Machine Recipe [7]: Here is the recipe, hope you enjoy it as much as we do, there is one step to the recipe that I don’t do, I don’t add the Italian Seasonsing to the recipe, we actually enjoy any seasonings baked on top the bread. 8. Brioche with Yogurt (Bread machine recipe) [8]: A Brioche is a French Bread which is rich and sweet in flavour, usually baked in a fluted pan or tins with a small spherical piece of dough placed on top. However, this recipe is for bread machines. Recipe from Blessed Homemaker.
9. Rosemary Cheddar Bread Recipe [9]: The bread machine makes this herbed loaf a snap to prepare. Recipe from Taste Of Home.
10. Bread Machine Italian Herb Bread [10]: This makes a beautiful, fragrant loaf. One of these days I’m going to make it on the dough cycle and shape it and bake it into a fancy artisan shape, but for now, we just eat the regular squat, rectangular loaves as they come out of the machine. 11. Cinnamon Rolls [11]: I’ve been making these cinnamon rolls for more than 20 years and it has evolved here and there. The biggest change has been going from kneading the dough myself, to making the dough in our bread machine with the dough setting. I really like using the bread maker because I don’t have to touch the dough (it’s an OCD thing) and there’s less mess. 12. Pita Bread Recipe [12]: Pita bread made with a bread machine, what could be easier? The only trick is to roll them thin enough (I didn’t roll my my first batch thin enough and they were lofty little pillows, but bad minimal pockets). The thinner batch made perfect pocket pitas. 13. Bread Machine Bagels [13]: I love them and once again, the bread machine makes it so easy. You just throw all of the ingredients in the machine, press a button and essentially, there you have it, homemade bagels. Did I mention they are utterly delicious? Plus, you can make any flavor you like. My favorites are everything bagels, which are dehydrated onion (reconstituted in warm water,) poppy seeds, sesame seeds and I like to add a little sprinkling of garlic salt and I also love sesame bagels. After having such amazing success with the basic white bread recipe, I decided to be brave and attempt to adapt her recipe for the bread machine. The outcome is an addictive bread that takes me straight back to the bygone days of Saturday morning cartoons and She-Ra pajamas. 3. Layered Greek Dip [3]: This Layered Greek Dip is the perfect “something different” to take to any occasion. It’s absolutely delicious- the flavors all go together perfectly, and it’s so good, you have to keep going back to it, because you just weren’t sure that the last bite was as good as you remembered. The ladies I shared this dip with just loved it. I think Andy loved it even more when I brought a little leftover home to share. 5. Baked Southwestern Corn Dip– Yum! [5]: Our family almost always has this dip at holiday parties, but I figured, why not in the middle of the summer? And, for kicks, why not have this dip for dinner instead of an appetizer? It’s full of yummy veggies so it can’t be completely unhealthy, right? 7. Warm Fennel Dip [7]: I had some dip left over and used it in a pasta dish (very yummy!). You could also get away with not adding the sour cream so experiment a bit! Cheers! Recipe found at The Culinary Chase.
8. Seven Layer Nacho Dip [8]: Some variation of this recipe has been found at almost every party or social event that I’ve ever been to. This is one of the simplest party recipes in the books. 9. Creamy Avocado Lime Dip (Crockpot) [9]: This recipe has you warm this in the crockpot. I think it was really good that way and we liked it. But I also think you could skip the crockpot and serve this cold. The advantage to the crockpot is that it warms the cream cheese and makes it mix together really well. If you serve this cold you would need to be sure that your cream cheese was really soft and then mix everything together really well. Either way this is a really good and really easy avocado dip. 10. Crockpot Sausage Dip [10]: This is an all-time favorite with my family, church family, and friends! Whenever we are planning a youth prayer meeting and we ask what the young people want to eat they all say “sausage dip!” Recipe from Kelly’s Favorite Recipes.
11. Pumpkin Seed Dip with Chili and Lime [11]: This exotic sounding dip tastes amazing with tortilla or pita chips. The lime juice and chili in the recipe are the perfect accents to the nutty, roasted pumpkin seed flavor. You will be pleasantly surprised! Recipe from Kitchen Sketches.
12. The Best Dill Dip Ever [12]: This dill dip is polite, yet ruthlessly efficient at what it does — delicately seasoned with a bit of parsley and a touch of seasoned salt and onion warming the background, it’s a dip where the freshness of dill dominates. Recipe from Shiny Cooking.

16. Perfectly Simple Guacamole [16]: It is Dad’s philosophy that when you find the perfect recipe for a particular dish you should stick with it. We believe we have found the perfect guacamole recipe. I can’t remember the last time we used a different recipe. It was in the far past. Recipe from Cooking For Seven.
17. White Bean and Artichoke Dip/Spread with Rosemary & Kalamatas [17]: You can serve this dip with just about anything—fresh veggies, crackers, pretzels, baguette slices—but it’s heavenly on homemade pita chips. I also think it would be delicious spread on a sandwich. Recipe from Farmgirl Fare.
18. Hot Clam Dip [18]: Here in Virginia there is a little chill in the air this weekend and college football season has begun at our house! Here is a dip that is great during the games. 20. Healthy Artichoke Dip [20]: Healthy might be a stretch, especially if you’re digging in with a bag of salty potato chips. But this dip is definitely not the mayonaise, cream cheese and more cheese dip that every other recipe seems to have. The star of this dip is actually artichoke hearts, made creamy with blended white beans (and, yes, a little Vegenaise and tofutti). 21. Crock Pot Recipe: Mexican Cheese Dip [21]: It’s easy, but tastes great and the leftovers can be stores in the frig and warmed up later. Recipe from In The Treetop.
22. Spanakopita Dip [22]: Spanakopita Dip is the dip that can do it all. A meal-of-a-dip full of spinach, studded with feta cheese, garlic, onions and various herbs and spices it is wonderful at topping chips, crackers and veggie sticks. But it doesn’t stop there. With very little effort, a bit of phyllo dough, and some olive oil, it can be transformed into a beautiful and flavor-packed amuse bouche or finger food. (With just a little more tinkering, it can be made into actual, honest-to-goodness spanakopita. But more on this in a future post.) No magic required! Recipe from Foodie With Family.
23. Secret Family Crab Dip Recipe [23]: I had to get special permission from my family members to share this recipe with all of you. Homemade Vanilla Oil: How-To

Use vanilla oil for any recipe requiring vegetable oil (cooking, baking, vinaigrettes [1]), it will add a nice vanilla kick to your dish. It’s so quick and easy to make, here’s how:
How To Make Homemade Vanilla Oil

Scraped Vanilla Bean Seeds From The Pod
Ingredients:

1 vanilla bean
2 cups vegetable oil

Directions:

* Cut open the vanilla bean and scrape out the seeds.
* Warm oil on top of the stove over low to medium heat.
* Add the vanilla seeds to the warm oil then stir with a whisk to mix the seeds and oil. Heat for about 5 minutes, stirring with a whisk frequently.
* Pour the vanilla oil into a sterilized glass jar and add the cut vanilla pod, submerge the pod completely in oil.
* Seal then store in a cool, dark location. Good to use after sitting for a few days, discard after ten days.

Gift idea: Fill a decorative bottle with your homemade vanilla oil (one that has an airtight seal) then wrap with raffia and attach a recipe card [2].

1/8 teaspoon sage

Poultry Seasoning

2 TBS sage
1 TBS thyme
1 TBS marjoram
1 TBS savory
1/2 tsp ground black pepper
Pinch of cloves

Pickling Spice

2 TBS cardamom seeds

* Mix together then divide evenly onto 12 cheesecloth squares (approx 4’’ square, 1/2 TBS herb mix per square); add a couple peppercorns and one bay leaf (dried) into each sachet; tie the sachets closed. Store in an airtight container and use as needed.

1/2 cup sugar
1 tablespoon cinnamon

Tender Ways With Less-Tender Cuts Of Meat

Slow Cooking Stew Is A Delicious Way To Enjoy Cheaper Cuts Of Meat

It is to your advantage, and to the family’s food budget, to know your cuts of beef. If you know exactly what section of the animal they come from you can save by buying meat which is lower priced because it is in less demand. By knowing how to cook these less-tender cuts, you can get the ultimate in flavor and tenderness!

These are the wholesale cuts from which the various retail cuts of your penny-saving meats will come:

* From the fore end of the carcass you can buy chuck and shank.
* From the mid undersection you will buy brisket, short plate and flank.
* From the far or aft end you will purchase rump and round.

The successful ways of cooking these are braising and cooking in liquid. Both are classed as “moist heat” methods. Long, slow cooking in “moist heat” in which meat is surrounded by steam or hot liquid softens the connective tissue–that part of the meat which is less tender. So with proper cooking, wonders can be worked with cuts that are considerably less expensive than steaks and rib roasts!

Before offering you a chart, which clipped and pasted onto a card for your recipe file will be your purchasing as well as cooking guide, let’s highlight these methods of cookery…

How to Braise Meat:

* Brown meat on all sides slowly in a heavy utensil. This develops the nice brown color and also adds to the flavor. You may or may not dredge the meat in flour first–it does help to develop a deeper brown–but if you do, fat should be added to the pan. When not flour-dredged, the meat may be browned without fat being added.
* After browning season with salt and pepper; spices, herbs and vegetables may also be added. Seasoning is important with these cuts and you can do much to add flavor to the end product by adding an extra dash of seasoning at this stage of cooking.
* The next step is to add a small amount of liquid. This may be water, broth or soup stock, water from cooked vegetables (which you thoughtfully saved instead of poured down the sink) or sour cream. Cover the utensil with a tightly-fitting lid. This will hold in the steam which is necessary for softening the connective tissue. Then cook slowly at a low temperature; this means over low heat, a simmer and not a boil. It may be done on top of the range or in the oven; if in the oven do not set temperature over 300°F. Cooking too rapidly over high heat will result in a dry and not-so-tender end product. It will most surely afford fewer servings. One of the penalties in ignoring this rule is shrinkage and if you are economy minded, you don’t want to shrink your savings along with the meat!

A tasty accompaniment of any braised meat is the gravy made from the liquid in which the meat is cooked. It also contains good food nutrients too. So serve the liquid as a sauce or gravy; it may be thickened if desired.

How to Cook Meat In Liquid:

* Brown meat as described for braising. Cover with water or stock. This is the principal difference between this method of cookery and braising–meat is entirely covered with liquid. Season well. Try one or a combination of these in addition to the usual salt and pepper: Marjoram, bay leaves, parsley, thyme, celery and onion tops, cloves, garlic, peppercorn, tomatoes or green pepper.
* Simmer meat, tightly covered, until tender. Overcooked or boiled, it will be flavorless and stringy, hard to slice. And it will also shrink! If you plan to serve the meat cold, let it cool and then chill it in the stock. This preserves flavor and prevents shrinkage.

Braise chuck, rump and heel of round 3 1/2 to 4 hours for 3-5 pound cuts. Allow 1 1/2 to 2 hours for 2 pounds of round (Swiss) steak cut 1 inch thick and 1 1/2 hours for 1 1/2 to 2 pounds flank steak.

Simmer in Liquid 3 to 4 hours for 4 pounds of shanks, 4 to 6 hours for 4 to 8 pounds corned beef brisket. Allow 4 to 6 hours for 8 pounds fresh beef brisket or plate.

Got to wait for it to cool down some before we start baking up some of those...
Them Dip recipes made me hungry... Tipnut is a new source to me. Seems like a good reference site to add to my folder!

How To Make Rose Water: Recipes & Tips

Rose water (also spelled Rosewater) can be used in cooking as well as a rich beauty aid.

Try some as a facial toner or astringent, in your bath water or as a facial splash (refresher).

Notes on Preparation:

* Rose petals must be freshly picked and have no pesticides or chemicals used on them.
* Pick the roses just after the morning dew has evaporated, about 2 to 3 hours after sunrise.
* Use only the petals, not the stems or leaves.
* Wash the petals quickly to remove any bugs or specks of dirt and immediately process with one of the methods below.
* If you don’t grow your own roses, ask at the local florist or Farmers Market for organic roses.

Old Fashioned Recipe for Distilled Rosewater

(Rose Hydrosol)

Items Needed:

Fresh rose petals (3 to 4 quarts)
Ice cubes
Distilled Water
Enamel canning or stock pot with lid
Deep, heavy heat proof bowl

Directions:

* Fill the bottom of the pot with the rose petals and pour water over them until the petals are just covered. Place the bowl in the middle of the pot. The rim should be at least a couple inches higher than the water. If you have a canning rack, you can set the bowl on top of that so the bowl doesn’t sit directly over the heat. A pyrex loaf dish underneath the bowl would do the trick too. Set these in place first before adding the rose petals and water.
* Cover the pot with its lid, but position the lid upside down so that you have a dipped “container” to hold the ice on top (to be added later). Now turn on the heat and bring the water to a boil.
* Once the water is boiling, fill the top of the inverted pot lid with ice cubes. Turn the heat down and keep at a bare simmer for about two hours.
* Top up the ice as needed and quickly peek occasionally to see that the petals don’t boil dry.

This process will enable condensation to form on the top inside of the pot lid. The condensation will drip down into the bowl inside the pot, the liquid inside the bowl is your rose water.
Old Fashioned Rose Water Recipe

Items Needed:

Rose Petals
Distilled Water
Enamel Pot (any size)

Directions:

* Fill the bottom of an enamel pot with the rose petals a few inches deep. Pour distilled water over the petals until they are just covered.
* Turn on heat for the water to be steaming hot, but do not boil. Let the water steam until the petals have lost their color, the water has taken on the color of the rose petals and you see rose oil skimming the surface. This will take approximately 60 minutes.
* Strain the water and squeeze out the liquid from the rose petals, this is your rosewater.

Homemade Rosewater – Quick & Easy Recipe

* For every 1 firmly packed cup of rose petals, pour 2 cups boiling water over top. Cover and steep until the liquid is cool. Strain, squeeze out the liquid from the petals, and refrigerate the rose water in a sterilized jar.

Oven Recipe for Rosewater

* Preheat oven to 450°. Line an enamelware roaster a few inches deep with rose petals. Fill with distilled water until the petals are just covered. Place the roaster uncovered into the oven and bring to a boil.
* As soon as it starts boiling, turn off the heat and cover the roaster. Leave in the oven until the water is cool (several hours). Once cool, strain the water and squeeze all the petals to remove the liquid. Store the rose water in the refrigerator.

Important Notes

* After preparing the rose water with your recipe of choice, refrigerate in a sealed, sterilized jar.
* Use in recipes that call for rose water, but make sure to use fresh batches. Although the water is refrigerated, my notes have vast discrepancies in shelf life. Some state several days, some say a year.

Rose Water Beauty Aid Additive

* Add 1 part rubbing alcohol or vodka or witch hazel to 10 parts rose water to use as a facial astringent or toner.

No Salt Seasoning Shake

Here’s a recipe you can use to flavor dishes, nice alternative to salt if you’re trying to cut or reduce salt from your diet.

No Salt Seasoning Shake Recipe

Ingredients:

1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp mustard (dry)
1/2 tsp thyme (dried)
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp white pepper
1/4 tsp celery seed

Directions:

* Mix all ingredients together and store in an airtight container. You can keep a portion of this in a shaker and just shake over your dish as you would salt.
* Try this on soups and meats too when cooking, works well for seasoning chicken.

Banana Breakfast Cookies – Recipe

This makes a batch of cake-like cookies made with good things like bananas, bran and whole wheat flour. Nice on-the-run breakfast snack and a great way to sneak some extra bran into the day.

Ingredients

2 eggs (beaten)
1 cup mashed bananas (ripe)
1 cup brown sugar
3/4 cup margarine

1/2 cup milk
1 tsp baking powder

2 1/2 cups whole wheat flour
1 cup bran
1/2 cup molasses
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt

Directions

* First blend the margarine with the eggs, sugar and bananas.
* Next mix milk with the baking powder, add to above. Add rest of ingredients and mix well.
* Drop by heavy tablespoons onto greased cookie sheets.
* Bake at 375°F for 10 minutes.

Tip: You can add raisins to the batch if you like.

Updated: Removed raisins amount, seemed too much

Today’s feature tip is from Bohemian Revolution with Infused Water Recipes – Refreshing Non-Alcoholic Summer Drinks [1].

If you caught my tips earlier this year for How To Beat The Soda Pop Addiction [2]–you’ll find these suggestions a great way to increase your water intake while cutting the soda without even missing it:

Spanish cuisine brought us aguas frescas, water infused with fruit juices or juices from veggies like cucumber. They have a very light, refreshing flavor that’s definitely not just water, but they’re not as heavy as a smoothie. The only problem: most recipes load them up with sugar, making them very little improvement over soda (also, the natural sugars in fruit may be less bad than refined sugar, but they’re still virtually empty calories). There are a couple of ways to turn the agua fresca concept into an exciting light beverage that’s health-friendly.

A few of the tips you’ll find:

* You can invent your own recipes for fruit-infused water
* You can also infuse with herbs and even flowers
* If you’re watching calories or carbs (fruit calories are mostly carbs, so it’s the same battle either way), be aware which fruits are more or less sugar dense than others
