Several years ago, at a small and intimate, tucked-away restaurant in Santa Fe, New Mexico, I had a dessert that was so delicious and creamy I didn't want to take that last bite because I just wanted to savor the taste forever. I always wished that I had asked if they would share the recipe, but I didn't think about it.

Not long after we returned home, I was browsing through one of my "Pie" cookbooks, and there was a picture of one that looked so much like that famous Santa Fe chocolate pie ... and the rest of the story is that of course I made the pie, and it's as yummy as I remembered the original, so here it is for anyone who would like to try it:



Chocolate Cheese Pie

Heavenly, but serve small portions to the dieters at your table

9" Chocolate Graham Crust
1 (6 oz.) pkg. semisweet chocolate pieces
1 (8 oz.) pkg. cream cheese, softened
3/4 cup light brown sugar
1/8 tsp. salt
1 tsp. vanilla
2 eggs, separated
1 cup heavy cream, whipped

Melt chocolate over hot (not boiling) water; cool about 10 minutes.

Blend cream cheese, 1/2 cup sugar, salt and vanilla. Beat in egg yolks, one at a time. Beat in cooled chocolate. Blend well.

Beat egg whites until stiff but not dry. Gradually beat in 1/4 cup sugar; beat until stiff and glossy.Fold chocolate mixture into beaten whites. Fold in whipped cream.

Pour into chilled crust, reserving 1/4 of mixture for decorating. Chill until filling sets slightly. With tapered spoon, drop reserved mixture in mounds over top of pie. Chill overnight.

Makes 8 servings.

Chocolate Graham Crust

Mix thoroughly 1 1/2 cup graham cracker crumbs, 1/4 cup brown sugar, 1/8 tst. nutmeg, 1/3 cup melted butter and 1 square unsweetened chocolate, melted. Press into 9" pie pan. Chill until firm.

Afternoon Billie and Company.

Went to our grandson's baseball game yesterday evening. The game was played on the campus of his Christian school.

A display called "Freedom Isn't Free" has been set up on one of the playing fields of the campus. It is a tribute to those heroes who gave the ultimate sacrifice in the Iraq and Afganistan Wars.

Here's a couple of pictures taken from opposite ends of the field...



Each cross bears the name of a member of our military with the date they died. As I walked the rows tears began to flow. Some folks had place mementos on some of the crosses. One that stands out which I will always remember bore a simple message encased in a zip-lock bag. There are four crosses beside one another. The message tells of each one of these four soldiers... members of an EOD team. An explosion took their lives. The explosion was so violent, that only pieces of their bodies remained. The remains were gathered and placed in one casket and buried at Arlington. These men lived and fought as a team. They died as a team and are buried as a team.

Thank you, Dave. This is so very touching. I can understand how you felt seeing it in person. My friends and I talk today about “If we were raising children today, we would want them to go to a Christian school where they would have the freedom to say the ‘Pledge’ and say a ‘Prayer’. And especially to honor our American Heroes. The things they are teaching in regular schools today blows me away!

That sounds so delicious, Billie, I sure would like to have some of that at this moment. I am so sorry I couldn't be with you today. I always enjoy when you are around. I just had so much to do outside. I have some more to finish tomorrow and then I will get a few plants to set out. I always have geraniums, too, and some impatients. Don't think I will put out as many as usual. I have those two hanging ferns that my son gave me for Mother's Day. I just don't want too much to water every evening. That is so perfect! #2 gbaby is due any day and we can hardly wait! If there’s one thing this family loves, it’s babies. The 2 year old gbaby is so excited. They already know it’s going to be a boy, so when you ask him who’s in mommy’s tummy, he says Bubby. :)

I’m baack.

I was lost without my internet. It has been a very long day. Phone service was lost for more than 24 hours. The serviceman finally came and found a broken wire at the switching station.

Anyway, he came here and checked my wires and found no problem so went to that switching station and found the broken wire.

It is so good to be back online.

Thank everyone for your prayers yesterday. We arrived in court at 9:00; they called our case at 9:30 and we were finished by 9:33. No one showed up to contest our petition. If we move out of state, we will need the court’s permission but other than that, we decide where she lives and goes to school. There are a few more cans and can’ts but I didn’t see any that would be a problem.

It is going to take me a while to get thru the thread. I had better get started. :)

I missed everyone.

Thanks! I’ve missed you guys too! There wasn’t any point in trying to post—I wouldn’t have made any sense! LOL

Our garden is in full swing. :) Put up 16 sandwich size ziplocks of snow peas tonight. :) Hubby picked them. Cool right now but it will prob go up into the 90’s next week and they’ll fizzle. So will I! Good thing my busy season is during the cool weather—I’m not much for heat.

I’ll let you guys know when the baby gets here! LOL

No cats here, but we’ve got 2 rat terriers. :) Also, 23 buff orpington hens, 5 guineas, and a dozen ducks. I do love my critters!

Amy, I am just so happy for all of you. I wrote Prissy Missy first! I loved that picture of her. She is so darling and I know how much you love her.

So happy all that ‘old worry’ is over for you and Marissa too! Little girls shouldn’t have to worry! Growing up is hard enough! LOL!

I hope our prayers played some role and I am sure everyone here feels as grateful as I do. Now, you all can just live a normal and more relaxing life from now on.

Glad you’re back. I didn’t get to play much today as I had to get caught up on some of my work that I just keep letting go! There comes a point where you know you must work....LOL! I always enjoy Billie being here and I told her I was sorry I couldn’t come out and play. (((((Hugs)))))
