I’ll bet you will find the Ro-Tel tomatoes in your grocery store. (You may have to ask the manager where they are.) If not, you can use a can of diced green chilis, and two small cans of diced tomatoes. Ro-Tel is the only one I have ever used - they have a unique flavor.
The packets of Taco Seasoning should be by the spices - mixed in with Brown Gravy mix packets, Hollandaise Sauce packets, spaghetti sauce packets (ugh), etc.
You will find most chicken in enchiladas or burritos (etc.) is quite dry. This chicken is so tasty and moist! Good luck!
I have tons of photos that I took of it the other day, here on Picasa. I got a little carried away, so some look like duplicates. There are only so many different shots you can take inside one of these things without repeating them.
It's just a small fifth wheel. We didn't want anything huge for our first RV, and it is just the two of us and the twoo little fur-babies. Click on the thumbnails and then arrow through them. :-)

This is what the can looks like - and they are never with the canned tomatoes. I always have to ask - as they change their place often - and they are usually on the top shelf.
This is one thing I ALWAYS stock up on, when they go on sale, as they are a bit expensive (but well worth the extra cost).
Here is what the Taco Seasoning packet looks like.
I have used several different brands (McCormick, Food Club, Kroger, Schilling, Ortega, etc.)
No matter what brand I use, it always turns out great!
Here is a recipe without the Rotel tomatoes or seasoning packet for you guys -
Mexican Chicken
1 pkg. boneless, skinless chicken breasts
1 can diced tomatoes
1 can diced green chilies
1 onion, sliced thin
2 cloves garlic, minced
1 tsp. chili powder
1 tsp. salt
1/4 tsp. oregano
1/4 tsp. cumin
1/4 tsp. pepper
Put all ingredients in crock pot and cook on low 6 hours or on high 4 hours. Shred chicken with a fork and mix well. Serve with tortillas, Spanish Rice and Refried Beans. Garnish with guacamole, sour cream and shredded lettuce.
That sounds so good and I believe I could make a small batch of that for me or make a lot and invite company. What is your favorite way of fixing it with the ones you mentioned

I usually make crunchy tacos or burritos. It also makes good quesidillas. (Add a little cheese).
To make it for one - use one breast, one can of ro-tel and a half seasoning packet. (You will still have tons left over - and it can be frozen - or, (ahem) shared with hungry sons.

I am anxious to start outfitting it and making it our home away from home. Our first big trip with it will be in June to the NASCAR races at Infinion Speedway in Northern CA, but first we will do a few test weekends at a near by campground just to see how everything works and how the dogs like it. What dog wouldn't like RVing, with all the new sights and smells?
