Pears with chocolate it is still a classy dessert after all of the years.
Pears Helene was invented more than 100 years ago to mark the premiere of the new opera Helene, by Charles Camille Saint-Saens, at the Monte Carlo Opera house on Feb. 18, 1904. The dessert was created by Auguste Escoffier to honor both the opera and the famous star, Dame Nellie Melba.
It was a time when chefs frequently named dishes after music and theater celebrities. Melba was responsible for ending that practice. A perfume was named after her that she found repugnant. She sued the manufacturer and forced him to cease selling the product because he had not gotten permission to use her name.
Melba didn’t object to Escoffier naming dishes including Melba Toast and Peaches Melba after her. She also didn’t receive any royalties. I suspect he sent her a free dessert every now and then.

Decisions Haiku

Decision taking
skills honed to a razor's edge.
Very few pet me
Those that do have passed
the test and are worthy of
of my affection
Many Big Ones teased
and taunted me. Only Jack
sought out equal terms
Open arms and soft,
gentle words go a long way
to winning my heart
He seems to speak my
language and gives me lots of
space to call my own
I have a huge Yard
to protect. Others visit
but don't stay too long
Jack puts food out for
visitors. He goes Inside.
They eat and I watch
It's a game we play.
The visitors are grateful,
but I rule the roost!
I stay Inside when
it's cold. Jack keeps odd hours.
Sometimes sings badly
I can count on Jack
for gentle rubs whenever
we think I need them

I will give you a poem when you wake tomorrow. It will be a peaceful poem. It wont make you sad. It wont make you miserable. It will simply be a poem to give you When you wake tomorrow.
It was not written by myself alone. I cannot lay claim to it. I found it in your body. In your smile I found it. Will you recognise it?
You will find it under your pillow. When you open the cupboard it will be there. You will blink in astonishment, Shout out, How it trembles! Its nakedness is startling! How fresh it tastes!
We will have it for breakfast; On a table lit by loving, At a place reserved for wonder. We will give the world a kissing open When we wake tomorrow.
We will offer it to the sad landlord out on the balcony. To the dreamers at the window. To the hand waving for no particular reason We will offer it. An amazing and most remarkable thing, We will offer it to the whole human race Which walks in us When we wake tomorrow.

Today we have “warmed up” to 54..With the wonderful rain we had unusual cold weather..back to 80 Monday...
I heard the water running in the ravine today for the first time in months..a wonderful sound.
