Dog walks have been VERY short in this cold spell. Very intense week with a lot going on has ended & glad it is the weekend. We have snow coming today but the temps will be 20 degrees plus higher than yesterday
Going to make scratch potato pancakes today - first time for years. Got my mom to wrote out her recipe which is the best I have ever had. I used to put my potatoes in blender but she hand grated with coarse grate. I LOVE potatoes anyway. Will do it her way
Snowy but a bit warmer today than it has been.

Our passports were in MonkeyTown as of 2330 last night. They are not here yet. I expect that they will arrive during the AM. I will be calling the Auburn post office as soon as it opens to make sure.
Not the post offices fault.
My mom would make something she called ROSTI. (Please put two dots of that “O”.) They were the best ever.
Alas, they have gone the way of all carbohydrates in my life.

We're gathering at my mom's this evening to celebrate my older sister's birthday. Going to be a casual affair with light menu of shrimp, beef wellington sandwiches, cake, etc. My sister is the oldest of the brood, has never married, but loves to dote on her nieces and nephews.

I would not survive the low carb diets most of you are faithful with following. I LOVE pasta & potatoes & have them daily.
Tuesday I think I will do a movie Marathon. We have a 2nd run theater about 30 miles north — on Tuesdays you can do movies for $1.00 each! Will catch up on the ones I missed - low ratings or not.
Will wear my Alaska Palin/McCain Sweat Shirt and Bush/Cheney 04 Hat
And yes, we expect the dogs, Whiskey and Moonshine, to be waiting for us when we return. Now, I haven't heard anything about them in the last two or three months and Christmas time (as is Easter) is always a danger time for dogs. So, I'm a bit fearful as well.
I'm wondering if it is too early to call and confirm our China Air tickets? I don't want to do that until I'm absolutely postive beyond a shadow of a doubt that we're flying today. I wonder if it is too early to call the post office, which officially opens to the public at 0900, to see if the passports are there? Sigh, sigh, sigh.
Rösti (Roesti) RecipeRösti is a traditional Swiss dish of fried grated potatoes, a little like a hash brown. Roesti are usually served as a side, although they can also make a wonderful main along with a salad and perhaps an egg, sunny side up.
In this recipe you can choose to either make one large roesti or 4 individual ones. Firstly peel the cooked potatoes and grate them through a coarse grater. Slice the onions into thin wedges (Lyonnaise). Melt the butter (please resist the temptationto use oil as you will not have the same result!) in a non-stick frying pan and add the onions and sweat them until they look glassy and transparent. Add the grated potatoes and the salt and stir through. Fry while stirring them around in the pan for about 3 to 5 minutes. Press together to form a flat cake and fry over medium heat until there is a golden crust on the bottom. Place a serving platter on the pan and turn the pan upside down, so the Roesti falls on the platter with the crust on top. Alternatively, toss the roesti into the air and flip it like a pancake back into the pan, then slide it onto the serving platter and serve immediately. Variations Bernese Roesti: Add streaky bacon, cut in small strips (lardons) orcubes. Basilean Roesti: Use half sliced onions and half potatoes. Valaisian Roesti: Once the roesti has cooked; place sliced tomatoes and some Raclette cheese (or any other well melting salty cheese) over the top. When the cheese has melted, serve with the roesti on the bottom, so don't flip! (Serves 4) |
