Dog walks have been VERY short in this cold spell. Very intense week with a lot going on has ended & glad it is the weekend. We have snow coming today but the temps will be 20 degrees plus higher than yesterday
Going to make scratch potato pancakes today - first time for years. Got my mom to wrote out her recipe which is the best I have ever had. I used to put my potatoes in blender but she hand grated with coarse grate. I LOVE potatoes anyway. Will do it her way

Our passports were in MonkeyTown as of 2330 last night. They are not here yet. I expect that they will arrive during the AM. I will be calling the Auburn post office as soon as it opens to make sure.

My mom would make something she called ROSTI. (Please put two dots of that “O”.) They were the best ever.
Alas, they have gone the way of all carbohydrates in my life.

I made a pot of potato soup w/corned beef yesterday....comfort food on a cold day!
I love pototos too - anytime and anywhere. They are NOT, however, on the low-glycemic index list. So - limited.
