GeeBee, my recipe is easy, but it is the absolute best Pecan Pie recipe I have ever eaten, and there is no way, nor any need, to even try another one. It is my family recipe and I don’t know how many years we’ve been making it! Here, if you are interested:
I make my own pie crust, but I have also used Pillsbury’s refrigerated pie crust (2 crusts for a 9-inch pie - just unroll), because it’s really not too bad! LOL
Pecan Pie ~ 350 degrees ~ 1 hour
1/2 cup granulated sugar
1 cup (white) Karo syrup
1/4 tsp salt
1/4 cup melted BUTTER (NOT margarine)
3 eggs (VERY WELL BEATEN)
1 tsp vanilla
1 cup chopped pecans (please do not use ‘store-bought’!)
Mix sugar, karo & salt. Add melted butter and blend well. Add eggs and vanilla. Blend well. Add pecans, stir, and pour into unbaked pie shell. Bake until knife comes out clean. (about 1 hour, but check at 50 - 55 minutes)

LOL! By “my family recipe”, I do mean MY family - my mom never made another pecan pie except that one! She actually used to “place” pecan halves in a beautiful pattern on top of the filling before baking it. :) I don’t - it doesn’t cut as clean as pecan pieces!

You are welcome, GeeBee. There’s really pretty much no way it can fail. Just don’t overcook it - mine’s still sorta soft when I take it out of the oven (toothpick DOES come out clean though) :)
And honestly, that Pillsbury pie crust is better than most ready-mades and even some homemades. :)

Thank you, yorkie. Everyone here - everyone! - does so much to make Amy’s a beautiful and fun and warm place to get away from some of the ugly stuff in the world. I absolutely LOVE creating, and the pc is so much easier than mixing oils and cleaning brushes! The openings themselves are always a pleasure to do (I know I speak for Lori and Meg and Amy, too), but always nice to hear they’re appreciated. :)
