Hi, mrstank - it's on hiatus, at least for the time being. Most of the regulars are here though - it really has much of the same feel about it as the Finest always did.

Many of you may not be aware of the wonderful thread (here on Free Republic) that nw_arizona_granny hosts.

I wasn't - until granny made such a sweet post to me about yesterday's opening posts - saw her tagline with the link and went there and browsed around. Printed a recipe for a crock pot Mexican dish immediately!

Billie, I’ll have to go check out your recipe! My favorite Mexican crock pot recipe has only three ingredients, and people always beg for the recipe.

MEXICAN CHICKEN

3 boned and skinned chicken breasts
2 cans Rotel tomatoes and green chili
1 pkt. of Taco Seasoning

Cook on low for 6 or 7 hours, and the chicken will shred easily. Can be used for tacos, enchiladas, burritos, chimichangas, or even for fajitas, nachos, or even Mexican salad.

(Hope this wasn’t the same one as yours! LOL!)

The one I found there is Tijuana Pie, and it has ground beef instead of chicken. However, I LOVE chicken green chili dishes, and make one that is an all-time, quick favorite, easiest EVER 'take to potluck dinners'. It is all canned ingredients except for the grated cheese and the chips. Goes together so quickly, and just has to bake until it's hot and cheese melts.

However many CANS of these you want to use - depends on how many you want to feed!

Chicken/Green Chili Casserole

cut green beans, drained
chopped green chilis
chunk white meat chicken
cream of mushroom soup and/or cream of chicken soup
Dorito chips
grated Colby/Monterey cheese
taco seasoning

Mix together green beans, green chilis, chicken and soup, add Doritos chips and a little taco seasoning, mix all, put in oblong baking dish and top with grated colby/monterey jack cheese Bake at 350 until hot and bubbly and cheese melts. Every time I take it somewhere, someone wants the recipe - especially when they find out how easy it is.

That sounds really good, Billie. I have a recipe that I use all the time that is similar, except it uses Fritos and doesn't have the green beans in it....

Chicken Casserole

4 to 5 skinless, boneless chicken breasts
1 small can diced Ortega chilies
1 can cream of celery (or mushroom) soup
1 can cream of chicken soup
1 cup milk
1 pkg (8 oz. or more) mild or medium cheddar cheese
1 (9¾ oz.) bag of Fritos Corn Chips (or enough to
completely cover the bottom of casserole dish)
1 small can sliced black olives, drained (optional)

Cook chicken breasts and dice into bite
sized pieces. Mix chicken, chilies, soups
(undiluted), olives and milk in a bowl. Put chips
in bottom of a 13X9 inch baking dish, then pour
mixture evenly over chips. Top with grated
cheese. Bake in a 350 degree oven for
30 to 40 minutes or until hot through and cheese is melted.

(I think this is even better warmed
up the next day. Do not add salt until
you taste the casserole. Often the Fritos
are salty enough.)

Yum...I think I know what I will be fixing for dinner tonight - or, I might try yours for a change. It sounds really good. :-)

Oh, I like black olives, so that sounds like a great addition. This could be done with the canned white meat chicken, too, in case you didn't want to cook chicken breasts. I know the chicken breasts from the market are way more economical than buying enough in the can! Just sayin'.....I look for the easy way about seven or eight times out of ten.

Now, send me a slice of that banana split pie - you can slide the coolwhip off the top and put "real" on it. :)

Lori .... I will go back to see which graphics you used. The only one I remember is the Elizabeth Browning’s How do I love thee? I’ve made a note that it was used. Other than that one, I think you used Welcome Graphics that were new to me.

Well, I guess I did make a couple new ones. The sandcastle graphic was new....I can't remember which others I may have done, but I do know that I didn't put much time into any of them.

Which reminds me, I need to freepmail you about Fish Hawk's "grandmother graphic". I need to find out when you need it and if there is a poem that needs to be overlaid on the graphic.

The next one will either be Las Vegas or California. Will need to find something for Marissa in Vegas.

Well, the Circus, Circus is supposed to be a "family hotel/casino" and I have heard that they are trying to make Las Vegas more family friendly. But I haven't been there in many years, so I don't know what there is for kids to do.

Such a sweet little church. It reminds me of the little churches here in NH.

There were so many pretty little churches like that all over the Point Pleasant area....lots of American flags flying too. It was evident everywhere that God and Country make up the foundation of the fine people in that part of West Virginia.

You're in Hew Hampshire? My husband and I just got back home from a short vacation in Massachusetts (Salem and Plymouth area). I was born in Framingham but never lived there. I do remember summer vacations when I was a little kid up at my grandparent's place on Newfound Lake in NH. They kept a little travel trailer up there all year round. Very pretty part of the country, but I am afraid way too much snow for this soft Californian. LOL

I will try cool whip on the first one. LOL

Well, if you do, DON'T get the extra creamy kind and DON'T stir it before you spread it on the pie. I think that is where I went wrong. But, I don't care, next time I will use whipped cream. Cool Whip has never worked out well for me in recipes for some reason.
