Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.
At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."
Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.
A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.
"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Peppermint Milk Bath Recipe
1 cup powdered milk
1/2 cup cornstarch
2 cups hot water
1/2 teaspoon peppermint oil
Herbal Milk Bath Recipe
1 cup powdered milk
1/4 cup cornstarch
2 TBS dried herbs of choice
2 cups hot water
Almond Honey Milk Bath
1 TBS Almond Oil
1/4 cup honey (*omit honey if mixing ahead, add when using)
1 cup powdered milk
2 cups hot water
Lavender Milk Bath
1 cup powdered milk
1/8 cup dried lavender
2 cups hot water
Directions For Each Recipe:
* Mix ingredients together with a whisk until powdered milk is dissolved then pour into running bath.

Orange Mincemeat Squares
Ingredients:
1/2 cup chopped nuts
1 1/4 cups rolled oats
1 cup sifted flour
1/2 cup brown sugar
1/2 cup white sugar
1/2 tsp salt
3/4 cup butter
1 1/2 cups mincemeat
1 medium orange, unpeeled, finely ground
1 egg yolk, well beaten
2 TBS water
Directions:
* Combine nuts, rolled oats, flour, brown sugar, white granulated sugar and salt, mix well.
* Cut in butter with pastry blender or 2 knives until mixture is consistency of coarse crumbs. Spread half of mixture in a well greased 9×9x2 inch pan.
* Combine mincemeat and ground orange, spread over the crumbs. Top with remaining crumb mixture, pressing down well.
* Blend beaten egg yolk with water; spoon over crumb mixture.
* Bake at 350°F for 50 minutes.
* Cool in pan. Cut in squares.
Yield: Makes 16 squares, each 2 1/4 “ in size

Ingredients:
6 cups chopped apples
4 cups chopped raisins
2 cups currants
2 lemons, juice and rind
3 cups water
1 lb. mixed peel
3 cups sugar
1 cup molasses
3 cups chopped suet
2 tsp cloves
2 tsp cinnamon
2 tsp nutmeg
Directions:
* Simmer all the ingredients together for 15 minutes. Cover with a clean cloth and let stand overnight in a cool place, then seal in sterilized jars.
* Store for 2 weeks before using.
*Can use for pie fillings, tart fillings, whatever you like

Mincemeat Fruit Cake Recipe
This makes a quick and economical fruit cake.
1. Cream together 1/2 cup shortening and 1 cup sugar.
2. Add and beat until smooth and creamy: 2 eggs, well beaten.
3. Sift together: 2 cups sifted flour, 2 TBS cocoa, 3 tsp baking powder, 1/2 tsp salt.
4. Add the flour mixture to the creamed mixture, alternating with 1/2 cup water, sherry or grape juice (real grape juice, not the purple powdered stuff).
5. Beat the above until everythings thoroughly blended.
6. Then add 1 cup mincemeat (first drained dry), 1/2 cup nuts, finely chopped.
7. Pour into a greased pan 8×8x2 inches. Bake at 300°F. approximately 1 1/4 hours.
Master Ingredient List:
* 1/2 cup shortening
* 1 cup sugar
* 2 eggs, well beaten
* 2 cups sifted flour

Homemade Lemon Sugar Recipes

Store the Lemon Sugar in an airtight container and refrigerate. Can be used for several months. There is also an Orange Sugar recipe at the bottom.
Recipe #1
3 Lemons
2 Cups Sugar
* Remove the zest from the lemons using a citrus zester. Roughly chop lemon zest.
* In a food processor, add 1 cup of the sugar and all the lemon zest. Pulse for a few minutes until the zest has been finely ground.
* Add the rest of the sugar and toss until well mixed.
* Spread the lemon sugar in a large pan and let sit until dry, approximately 1 hour.
* Store in a sealed, airtight container and use as needed. Refrigerate until used.
Recipe #2
3 TBS sugar
3 TBS confectioners sugar
6 drops fresh lemon juice
* Blend well and use. Can be stored in an airtight container. Refrigerate until used.
Recipe #3
2 1/2 TBS coarsely snipped lemon rind, pith removed (white part)
1 1/2 cups granulated sugar
* In a blender add 1/2 cup of the sugar and all the lemon rind. Blend for a few seconds until the peel is finely blended.
* Add the rest of the sugar and mix well.
* Store in an airtight container and refrigerate until needed.
Uses:
Add to teas, sprinkle over cookies and use in baking instead of regular white sugar. Also try as toppings for fancy breads.
Gifts:
Place lemon sugar in decorative glass jars and give as gifts. Include a tag with ideas for use as well as the recipe itself if you like.
Alternatives:
You can replace the lemon rind with orange rind if youd like to make Orange Sugar, also try limes and other citrus fruits.
Tip for the citrus sugars: Grate the peel from all the lemons, oranges, limes, grapefruits (whatever citrus fruit you use) as you eat them. Make into sugar immediately and store it for future use.
Heres a recipe for Orange Sugar as well:
Orange Sugar
1¼ cup grated orange peel
1 cup sugar
* Grate the peel from the oranges. Do not remove any of the pith (white part of the skin).
* Keep the grated peel free from juice.
* Rub the grated orange peel into the sugar.

1 lemon
1/2 cup vodka
1/2 cup water
* Peel lemon removing all of the white pith from the peel
* Dice the lemon peel finely
* Combine vodka, water and peel into a large glass jar, seal
* Store for 5 days before using
Recipe #2
1 large lemon
1/2 cup vodka
* Peel lemon making sure the peel has no white pith on it
* Chop peel roughly
* Add peel to vodka and heat to boiling
* Pour into a glass jar and seal
* Set aside for at least two weeks then use as needed
Recipe #3
1 lemon
1/4 cup water
1/2 cup vodka
* Remove peel from lemon, scrape off white pith
* Dice lemon peel
* Combine vodka, water and peel in a large glass jar, seal
* Set aside and steep for 5 days before using
Tips:
* Do not store in direct sunlight
* Can be used for up to one year
* Make sure your glass jars and bottles are sterilized before using
These would make lovely gifts, just pour the finished lemon extract into little glass bottles and tag with the recipe.

* First dissolve the baking soda in hot water then add the lemon juice. You can use ReaLemon for this (expired is fine).

You can also whip up some good, fresh smelling spray with just two ingredients: water or vinegar and essential oils.
* Simply fill a spray bottle with water or vinegar, add a dozen or so drops of your favorite essential oils and spray away!

Orange Extract Recipe
1/2 navel orange (large)
1/2 cup water
1/4 cup vodka
* Peel the half of navel orange and remove all white pith from the peel
* Dice the orange peel rougly
* Combine water, vodka and orange peel in a sterilized glass canning jar
* Cover and store in a cool, dark place to steep (for 3 to 5 days before using)
* Can be used for up to one year
Cute little gifts: strain and pour orange extract into sterilized apothecary bottles or decorative glass jars. Insert spirals of orange peel to add a nice touch.

* Combine all ingredients, mixing well, and store in refrigerator.

Ingredients:
1 can (300 mL) Regular or Low Fat Eagle Brand®
1 to 1 1/2 cups (250 to 375 mL) Irish whiskey*
1 cup (250 mL) table cream
1 tbsp (15 mL) chocolate syrup
1/2 tsp (2 mL) coconut extract (optional)
Directions:
1. In blender container, combine Eagle Brand, whiskey, cream, syrup and coconut extract. Cover and blend until smooth.
2. Serve over crushed ice, if desired.
Notes:
* 1 cup (250 mL) cold coffee can be substituted in place of the Irish Whiskey.
* For Rum Cream Liqueur Omit Irish Whiskey. Use 1 to 1½ cups (250-375 mL) rum.

1 cup household vinegar
1 TBS vanilla extract
1 tsp cloves
Directions
* Bring all ingredients to a boil then simmer over medium heat for two minutes. Remove from heat and allow to cool.
* Strain cloves then pour liquid into spray bottle, shake and use as needed.
Note: You can increase/decrease the vanilla & cloves amounts to your preference.

2 ozs. citric acid
Pour boiling water over sugar, acid and orange rind. Cooladd fruit juice and let stand overnight. Strain and put in sealers. Will keep refrigerated.
Pour a little in glass and fill with water for a refreshing drink.

Sponge Candy Recipe

This treat is something I loved to gobble up when I was a child. Good times. Now it would probably pull my teeth out.
Sponge Candy Recipe
Ingredients
1 cup sugar
1 cup corn syrup (dark)
1 TBS vinegar
1 TBS baking soda
Directions
* Using a heavy saucepan, stir everything but the baking soda over medium heat until the sugar dissolves. Now let the syrup continue to heat without stirring until it reaches 300° F.
* Remove from heat and quickly whisk in the 1 TBS of baking sodathis will cause the syrup to foam and puff up. Next pour the foaming syrup into a buttered 9×9 pan (do not spread or move the syrup with any utensils, allow it spread itself) .
* Once its cooled and hardened, break the candy into pieces and enjoy.

Stir: Always stir until the sugar is dissolved. One sugar crystal can cause the whole mixture to be grainy.
Beating: Beating is made easier by first cooling cooked mixture without stirring to lukewarm (110°F.). Use a buttered pan or platter. Always have pan ready before making candy.
Testing Candy: Its best to use a candy thermometer, but if you dont have one you can do the cold water test.
Cold Water Test: Drop a few drops of syrup into a small bowl of very cold water (not ice-cold). Form drops into a ball. The firmness indicates temperature of syrup.
Thermometer Test: Clip the candy thermometer to the pan after syrup boils. The bulb of the thermometer must be covered with boiling liquid. Read thermometer at eye level. Check accuracy of thermometer by placing it in hot water. When water boils, thermometer should register 212°F. If it is above or below, add or subtract degrees to make allowance in recipe.
TEST TEMPERATURE COLD WATER TEST
Thread 230°F. - 234°F. Syrup forms 2 “ thread when dropped from spoon
Soft Ball 234°F. - 240°F. Syrup forms a soft ball which flattens on removal
Firm Ball 244°F. - 248°F. Syrup forms a firm ball which does not flatten on removal
Hard Ball 250°F. - 266°F. Syrup forms a ball, hard enough to hold its shape, yet plastic
Soft Crack 270°F. - 290°F. Syrup separates into threads which are hard but not brittle
Hard Crack 300°F. - 310°F. Syrup separates into threads which are hard and brittle

Uses for Citrus Peels Plus Candied Lemon Peel Recipe

* Wash them, dry off the water and then store in their own freezer bags (ie. baggy for orange peels, another for lemon peels, etc.) and freeze. When you have a recipe that calls for lemon zest, just take a peel out of the freezer, let it thaw and then use in the recipe.
* Let the peels dry out and use them in [1] simmering pot recipes.
* Use the peels for [2] flavored sugars. Great for baking toppings and flavoring teas!
* [3] Save them to toss in the fireplace for a fragrant smell.
Another use for citrus peels is to candy them and use them in baking (things like fruitcakes, muffins and fancy breads) or cover them in chocolate and see what happens ;).
Candied Lemon Peel Recipe
*First make sure to remove as much of the pith of the peel as possible (the white part)
Ingredients
Peels from 6 lemons
1 1/2 cups water
1 1/4 cups white sugar
3 TBS corn syrup (light)
Sugar for coating (optional)
Directions
* Drop the peels in a boiling pot of water, reduce heat and simmer for 10 minutes. Drain all the water and repeat process with fresh water. Drain the water again and repeat, but this time let the peels simmer for about 20 - 25 minutes (peels should be tender). Remove from heat and drain the water.
* Once the peels are cool enough to handle, slice into small strips (about 1/4 to 1/2 wide).
* Bring to a boil the water, sugar and corn syrup. Let it boil for 3 minutes, then add the peel strips. Reduce heat, cover and simmer until the lemon peel starts becoming translucent. Remove the lid and cook the syrup down until there is only a couple spoonfuls of syrup left. Watch carefully at this point so nothing gets burned.
* Remove the peels carefully and lay singly on a wire rack to cool. Dry overnight.
Optional:
* While still warm, you can sugar coat the peels in a bowl of granular sugar (or coat by shaking in a plastic bag with sugar) and then allow to dry singly on a wire rack.
Secret for Success:
Remove as much of the white pith as possible before boiling the peels, it can add a bitterness if left on. Also make sure to cook the peels long enoughyou want them to be very tender (use a sharp knife to determine tenderness).

Gourmet Popcorn Recipes

3 quarts popcorn (popped)
1 cup white sugar
1/2 cup butter
1/4 cup corn syrup (light)
1/2 - 1 tsp vanilla (to taste)
1/4 tsp baking soda
Chopped nuts *optional, amount to taste
* Combine all ingredients except for the vanilla and the popcorn in a saucepan, and boil for 2 minutes on medium heatstir frequently. Stir in the vanilla and pour the hot liquid over the popcorn. Frequently shake and toss the popcorn so its all covered. Add the nuts at this point.mix in well so that they are evenly distributed. Chill in the refrigerator. Break off pieces to serve.
Lemon Dill Popcorn
lemon juice *amount to taste
dill weed *amount to taste
lemon pepper
* Fill a large bowl half full with hot, lightly buttered popcorn, spritz lightly with lemon juice, sprinkle dill weed. Shake and toss the popcorn in the bowl to mix, then repeat the lemon juice and dill weed topping. Shake to mix again. Top with sprinkles of lemon pepper. Amounts are to taste, but careful not to over butter or over spritz with lemon juicewill result in soggy popcorn. Use a spray bottle that has a light spray for the lemon juice.
Cheesy Herb Popcorn
1/2 cup grated parmesan cheese
1 tsp oregano (dried)
2 tsp basil (dried)
lemon pepper or black pepper
* Mix cheese and spices then sprinkle over hot, buttered popcorn. Shake and toss to evenly distribute. Serve while still warm.
Gooey Cheese Popcorn (Velveeta)
1 inch slice Velveeta (cut into cubes)
2 TBS butter
Salt to taste
* Place the cubes of Velveeta and the butter in a bowl and melt in the microwave, stirring as needed making sure all cheese lumps are gone and butter is well blended in the cheese. Drizzle the cheese over hot, fresh popcorn stiring the popcorn constantly so that the cheese covers all of it. Sprinkle with salt and enjoy.
Chocolate & Cherries Popcorn
4 ounces chocolate
1 ounce butter
2 TBS double cream
Glazed cherries, chopped *optional, amount to taste
Nuts *optional, amount to taste
* Melt chocolate and butter over low heat, then stir in cherries and cream. Lightly pour over popcorn, stirring continuously so all the popcorn is covered in the chocolate mix. Sprinkle top with roughly crushed nuts. Refrigerate for approximately 2 hours before serving.

1 cup whole almonds
1 cup pecan halves
1 cup cashews or walnuts
1 bag (3.5 oz.) Newmans Own Microwave Popcorn
½ cup margarine
½ cup unsalted butter
1 1/3 cups sugar
¼ cup light corn syrup
1 Tbsp. pure vanilla extract
* Preheat the oven to 300°F. Coat a large heatproof mixing bowl (16 cups or larger) and a 15 X 10-inch baking pan with margarine or nonstick cooking spray.
* In another 15X10-inch baking pan, combine the almonds, pecans, and cashews, and toast for 20 minutes, stirring occasionally. Remove the pan from the oven and cool the nuts to room temperature.
* Pop the popcorn following the package directions. Pour the popcorn into the prepared bowl. Add the nuts and mix well.
* Melt the margarine and butter in a heavy 2-quart saucepan over medium heat. Add the sugar, corn syrup, and ¼ cup of water. Mix well and stir often. Continue to cook over medium-high heat until it reaches 275°F on a candy thermometer. Remove the pan from the heat and slowly stir in the vanilla extract. (Stir carefully because the vanilla extract will spatter when added to the hot syrup.)
* Pour the hot syrup over the popcorn-nut mixture and mix until evenly coated. Immediately pour the popcorn into the prepared baking pan. Let cool for 1 hour. Break into pieces and serve or store in an airtight container.
Carmel Popcorn Bake
2 cups brown sugar
1 cup butter
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
vanilla
nuts - optional
popped popcorn - 6 quarts (store in a large roasting pan)
* Melt the butter over medium heat; stir in corn syrup, brown sugar, salt and bring to a boilstir constantly. Now without stirring, let boil for 5 minutes. Remove from heat and add baking soda, vanilla and nuts (if using). Pour evenly over popcorn and stir the mix until all popcorn is covered. Bake for one hour on low heat250 degrees, stir well every 15 minutes. Remove pan from oven and let cool. Break into chunks and store in airtight containers.

All you do is take popcorn say, 1/4 cup and put it in a brown paper bag (preferably the large lunch bags sold in supermarkets ), then fold over the top a few times (some people recommend staples, but it seems the bags can catch fire that way and why risk it; the staple is unnecessary), then pop until the kernels stop, which is high heat for two minutes in many cases.
I also caught this in the comments section:
Why bother with the bag? You can pop the popcorn right in a bowl, covered with a plate. Just need a closed environment so that the water inside the kernels turns to steam and pops. . .You can put flavorings and oils at the bottom of the bowl, or season afterwards. And theres no waste! [2] Source

Fudge Balls
Ingredients:
1/2 cup butter
1/2 cup white sugar
4 TBS cocoa
2 eggs
1 tsp vanilla
1 cup walnuts or pecans, chopped
30 arrowroot biscuits or graham wafers (crush into small pieces)
Directions:
* Mix together butter, sugar, cocoa and eggs in the top of a double boiler. Heat over hot water until everything is melted and thick.
* Remove from heat and add vanilla, nuts and biscuit bits.
* Roll into balls.
* Chill.
