Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.

At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."

Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.

A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.

"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Church Supper Ham Loaf

Yields: 8 servings
INGREDIENTS:

1 cup Quaker Oats
1 cup finely chopped sweet onion
2 stalks finely chopped celery
2 eggs, beaten
2 TBSP lemon juice
1 teaspoon ground mustard
1 teaspoon ground ginger
2-3 TBSP Worcestershire sauce to your taste
1 TBSP Course Black pepper
3-4 dashes ground nutmeg
1 TBSP paprika
1 pound finely ground fully cooked ham
1/2 pound bulk pork sausage
1/2 pound hamburger
GLAZE:
2 tablespoons and 2 teaspoons
packed brown sugar
1 tablespoon and 1 teaspoon cider vinegar
1 tablespoon and 1 teaspoon water
1/4 teaspoon ground mustard

DIRECTIONS:

1. In a large bowl, combine the first 11 ingredients. Add ham and
sausage, beef; mix well. Place in ungreased 9-in. x 5-in. x 3-in.
loaf pan. Bake at 350 degrees F for 1 hour.
2. Meanwhile, combine glaze ingredients in a small saucepan. Bring to
a boil; boil for 2 minutes. After 1 hour of cooking, remove loaf from
the oven; drain. Baste with half of the glaze. Bake 20 minutes longer
or until a meat thermometer reads 160-170 degrees F, basting
occasionally.

Enjoy with a side of scalloped potatoes, or a spinach salad!

Zesty Papaya Salad

Makes 4 servings

Ingredients
1-1/2 cups watercress
2 cups peeled and seeded papaya, thinly sliced
1 small avocado, thinly sliced
1 cup canned hearts of palm, drained and sliced
1 medium tomato, thinly sliced
2 tablespoons lime juice
2 tablespoons chopped cilantro
1/2 teaspoon herbal salt substitute
1/2 teaspoon ground coriander
1/2 teaspoon allspice

Directions
Arrange watercress on 4 small salad plates. Layer slices of papaya,
avocado, hearts of palm, and tomato on top. Stir together lime juice,
cilantro, salt substitute, coriander, and allspice. Drizzle over
papaya salads. Cover with plastic wrap and chill 20 minutes before
serving.

Coffee Ice Cream Dessert
One half gallon coffee ice cream
1 cup chocolate almond candy bars, chopped
20 lady fingers
Whipped topping or whipped cream

Line a small baking dish with ladyfingers. Stir chocolate candy into
coffee
ice cream and spread over ladyfingers. Place in the freezer until
ready to
serve. Spread whipped topping or whipped cream over the top before
serving
and also more chopped chocolate if you wish.

The Skinny: Use low fat frozen yogurt rather than ice cream and fat
free
whipped topping.

Mexican Macaroni ‘n Cheese

Here is another great recipe from our archived
messages that I thought would be good to share
again. This was posted in 2001 by the original
founder of this group. Enjoy!

Mexican Macaroni ‘n Cheese

12 oz (dry) hot cooked macaroni, drained
2 tablespoons butter
1 can (12 oz) evaporated milk
1 can Fiesta Nacho Cheese Soup (Campbell’s®)
2 cups shredded Mexican Cheddar cheese
1 can (4 oz) chopped green chile (do not drain)
1 can (4 oz) sliced black olives
3/4 cup thick medium salsa (I use Ortega)
Salt and Pepper to taste
Grease the crockpot lightly. Toss the hot macaroni with butter, add
remaining ingredients and mix well. Cover and cook on low for 3 to 4 hours.
Serves 6.

Crockpot Hot Herby Mushrooms

Crockpot Hot Herby Mushrooms

6 tbsps. butter
1 large onion, chopped
2 tsps. basil
2 tsps. oregano
1/2 tsp. thyme
1/4 cup lemon juice
1/2 cup sherry
1/4 to 1/2 tsp. red pepper flakes
3 lbs. mushrooms, washed, left whole ( I like to regular white ones)

Turn the crockpot on high. Melt butter; add onion and sauté until onion is limp. Turn crockpot on low. Add spices, lemon juice, sherry and pepper flakes and allow mixture to steep on low for 1 to 2 hours. Add mushrooms about 15 minutes before serving.

Depression Era Rice Pudding Recipe (Gluten-Free)

Grease a glass 9” x 13” Pyrex dish with solid shortening.

Preheat oven to 300F.

½ cup long grain white rice
½ cup sugar
1 can evaporated milk, diluted to make one qt [must use evaporated milk]
1 cup raisins
1 teaspoon vanilla extract
¼ teaspoon salt
Cinnamon to taste

Place all ingredients except cinnamon in pan. Generously sprinkle top
with cinnamon . At least once during the baking, stir cinnamon crust
into the rice and sprinkle top again with cinnamon. Let bake until
rice is tender, or approximately 1 ½ hours. Let cool and serve either
warm or cold.

Tomato Cakes

Cook Time: 20 Minutes Ready In: 40 Minutes
Yields: 4 servings

“Tasty and cheap, this is a recipe from the Great Depression. Excellent as a
side dish for supper, or even a main dish for a light meal.”

INGREDIENTS:
1 (14.5 ounce) can peeled and
diced tomatoes with juice
1/4 onion, chopped
30 saltine crackers, crushed
1 pinch salt and pepper to taste
3 tablespoons vegetable oil
DIRECTIONS:
1.Place the tomatoes, onion and crackers into a large bowl. Season with salt
and pepper, and mix thoroughly. Cover, and let stand for about 15 minutes.
This will allow the crackers to soak up the juices from the tomato. The
mixture should set up to be a stiff paste.
2.
Heat oil in a large skillet over medium-high heat. Form the tomato mixture
into patties, and place in the hot oil. Fry the patties, flipping only once,
until golden on both sides.

Sour Cream and Onion Bread

3 cups whole wheat flour (or white)
2 tablespoons granulated sugar
1 teaspoon salt
2 tablespoons wheat germ (optional)
2 teaspoons active dry yeast
1 (1 ounce) package dry onion soup mix
1 cup sour cream (or lite)
1/2 cup water

Place flour, sugar, salt, wheat germ, yeast, dried soup, sour cream,
And water in the pan of the bread machine in the order recommended by the
Manufacturer. Select the dough cycle, and press start.

Shape dough, and place in a greased loaf pan. Place in a warm spot, and
Allow to rise until doubled in size.

Bake in a preheated 350 degree F (175 degree C) oven for 30 minutes.
Cool.

This months recipe is:
Pickled Squash

8 cups yellow squash, sliced
2 cups sliced onion
1 tablespoon non-iodized salt
1 1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
2 cups cider vinegar
3 1/2 cups sugar
1 teaspoon celery seeds
1 teaspoon mustard seed
Combine squash and onion slices in a large enamel kettle; sprinkle with
salt. Let stand 1 hour. Add green pepper, vinegar, sugar, celery seeds and
mustard seeds and bring to a boil. Pack in jars. Bring water to a boil in a boiling
water-bath canner. Place hot filled jars in rack and into the water.
Starting timer when water returns to a boil with jars in it; process for 10 or 15
minutes.

Units: About 1,300

Manufacturer: Mother Hubbard’s Cupboards, of Toronto, Canada

Hazard: The cribs fail to meet the federal safety standards. The distance between the mattress support bracket in the lowest position and the top of the side rail in the highest position is less than the required 26 inches, posing a fall hazard to children who climb over the railing.

Incidents/Injuries: None reported.

Description: The recall includes the following wooden full-size cribs: “Enchantment” (model #210), “Hush a Bye” (model #215), “Once upon a time” (model #320) and “Rock a bye” (model #1900-350). Only date codes from 0306 through 0308 are included in this recall. “Mother Hubbard’s Cupboards”, the model number and date code are printed on a label located on the bottom inside of the right side.

Sold at: Juvenile product stores from March 2006 through March 2008 for between $500 and $650.

Remedy: Consumers should stop using the cribs immediately and contact Mother Hubbard’s Cupboards to receive instructions on how to re-install the support brackets to eliminate the hazard.

Hazard: The cribs fail to meet the federal safety standards for cribs. The cribs have a two mattress support system. The secondary mattress support, used for the lowest position, does not meet the full 26 inch minimum height in its lowest position, allowing children inside to crawl over the railing, posing a fall hazard.

Incidents/Injuries: None reported.

Description: The recall includes Davenport crib models that begin with the model numbers 273-xxxx-xxxx and have manufacture dates on or before August 2007 printed on a label located on the right side of the lower inner panel of the crib. The recalled cribs have two mattress support systems-a metal one and a wooden one. Newer Davenport cribs with model numbers beginning with 244-xxxx-xxxx that have one mattress support are not included in the recall.

Sold at: Specialty juvenile product stores nationwide from December 2006 through September 2007 for between $600 and $800.

Manufactured in: Vietnam

Remedy: Consumers should stop using the recalled cribs in the third lowest position, which uses the wooden mattress support, and contact Baby Appleseed to receive a repair kit. Consumers who are currently using the crib with the metal mattress support in the top or middle positions can continue to use the crib in those positions while awaiting a repair kit. (NOTE: Repair Kits will be available from the firm in mid-August 2008)

Hazard: The nailer can operate when the lock-off (safety) is in the locked position. Also, the nailer can operate when the trigger is not pulled and the contact trip is depressed. The unexpected ejection of a nail poses a serious injury hazard to consumers.

Incidents/Injuries: DeWALT has received two reports of nailers operating when the lock-off (safety) was in the locked position. No injuries have been reported.

Description: This recall involves the DEWALT DC608 18 Volt Cordless 2” 18 Gauge Straight Brad Nailer with date codes 200728 through 200821. “DC608” is located on the right side of the magazine. The date code can be found on the underside of the handle, once the battery pack is removed. Units stamped with an “M” following the date code are not included in this recall.

Sold at: Wholesale distributors and retailers from October 2007 through May 2008 for about $280.

Manufactured in: Mexico

Remedy: Consumers should immediately stop using the nailers and contact DEWALT for the location of the nearest service center to receive a free repair.

Name of Product: KéO Bicycle Pedals

Units: About 80,000 (40,000 pairs)

Hazard: The steel axle inside the pedal can break, posing a fall hazard to cyclists.

Incidents/Injuries: Look Cycle has received 14 reports of incidents with broken pedals, including 7 injuries which resulted in scrapes, cuts, contusions, elbow pain, and a knee injury.

Description: The recalled bicycle pedals are black and were sold separately from bicycles. Pedal models include KéO Classic, KéO Sprint, KéO HM and KéO Carbon. The model name is printed in white on the side of the pedal. Date codes between January 2004 and December 2005 are included in this recall. The date code for the KéO Classic, Sprint and Carbon pedals is on a dial stamped onto the pedal. The date code for the KéO HM is on the bottom of the pedal, with the letters A through L corresponding to the month, and the numbers 4 and 5 indicating 2004 or 2005.

Sold at: Specialty bicycle retailers nationwide from January 2004 through July 2007 for between $100 and $500.

Manufactured in: France

Remedy: Consumers should immediately stop using the recalled bicycle pedals and return them to the place of purchase, or contact Look Cycle USA to arrange for shipping and free repair.

Description: The recalled garments are Bongo Cheetah Girls Jackets with style number 8N6003 and RN number 119132 printed on the care label. The jackets were sold in girls sizes 4 through 6X.

Sold at: Marshalls stores nationwide from November 2007 through August 2008 for about $25.

Manufactured in: China

Remedy: Consumers should immediately remove the drawstrings from the sweatshirts to eliminate the hazard, or return the garment to either Marshall’s retail store or Kids with Character for a full refund.

Description: The Raw Blue hooded sweatshirts were sold in three styles: smack print, kapow print and comic magazine print) and various colors. The sweatshirts have style numbers 7FT5655, 7FT5455, and 7FT5515. Style numbers are printed on the garment’s sales tag.

Sold at: TJ Maxx, Mega Trends, Moonstone Shirts and MP Trading stores nationwide from July 2007 through December 2007 for between $30 and $40.

Remedy: Consumers should immediately remove the drawstrings from the sweatshirts to eliminate the hazard. Consumers can return the garment to the place of purchase or Raw Blue Sportswear for a refund.

Nine Firms Agree To Pay More Than $350,000 in Civil Penalties For Failing To Timely Report Drawstrings In Children’s Outerwear

WASHINGTON, D.C. - The U.S. Consumer Product Safety Commission (CPSC) announced today that nine firms have agreed to pay a total of $355,000 in civil penalties. The penalties settle allegations that the firms knowingly failed to report to the CPSC immediately, as required by federal law, that their children’s hooded sweatshirts, jackets, or sweaters were sold with drawstrings at the hood and neck. These products, which the firms eventually recalled, pose a strangulation hazard that can cause death to children. The settlements have been provisionally accepted.

The firms paying the penalties are:

AJ Blue LLC, of New York City, N.Y.
A&R Knitwear Inc., of New York City, N.Y.
Cobmex Inc., of Lakewood, Calif.
Liberty Apparel Co. Inc., of New York City, N.Y.
Rebelette International Trading Corp., of South El Monte, Calif.
Scope Imports Inc., of Houston, Texas
Sears Holdings Management Corp., of Hoffman Estates, Ill.
Siegfried & Parzival Inc., of City of Industry, Calif.
Vacation Clothing Exchange Inc., d/b/a Basix USA, of Lauderdale Lakes, Fla.

In February 1996, CPSC issued drawstring guidelines (pdf) to help prevent children from strangling or getting entangled on the neck and waist drawstrings in upper outerwear, such as jackets and sweatshirts. In May 2006, CPSC’s Office of Compliance announced (pdf) that children’s upper outerwear with drawstrings at the hood or neck would be regarded as defective and a substantial risk of injury to young children.

Federal law requires manufacturers, distributors, and retailers to report to CPSC immediately (within 24 hours) after obtaining information reasonably supporting the conclusion that a product contains a defect which could create a substantial risk of injury to the public, presents an unreasonable risk of serious injury or death, or violates a federal safety standard.

In agreeing to settle the matters, the firms deny CPSC’s allegations that they knowingly violated the law.

Rural Alaskans continued to experience a high rate of food-borne
infections, including botulism ... 10 cases of botulism were reported
in Alaska in 2007.

All but one of the botulism cases occurred in Southwest Alaska,
according to the state epidemiology section. Each case was traced to
traditionally prepared Alaska Native foods, including specific
problems with fermented beluga, fermented beaver tail, fermented seal
flipper, seal blubber, whale blubber and fermented fish heads. One
person died from botulism.

[Botulism is a rare but serious paralytic illness caused by a nerve
toxin that is produced by the bacterium _Clostridium botulinum_.
Foodborne botulism is caused by eating foods that contain the
botulism toxin. Foodborne botulism can be especially dangerous
because many people can be poisoned by eating a contaminated food.

Foodborne botulism has often been from home-canned foods with low
acid content, such as asparagus, green beans, beets and corn.
However, outbreaks of botulism also occur from more unusual sources,
such as chopped garlic in oil, chile peppers, tomatoes, carrot juice,
improperly handled baked potatoes wrapped in aluminum foil, and
home-canned or fermented fish. Persons who do home canning should
follow strict hygienic procedures to reduce contamination of foods.
Oils infused with garlic or herbs should be refrigerated. Potatoes
which have been baked while wrapped in aluminum foil should be kept
hot until served or refrigerated. Because the botulism toxin is
destroyed by high temperatures, persons who eat home-canned foods
should consider boiling the food for 10 minutes before eating it to
ensure safety; 9 of the 10 botulism cases in Alaska have been from
home-prepared food.

State health authorities announced today [8 Aug 2008] that another
_E. coli_ [O157] case linked to ground beef has been identified in a
Massachusetts resident, bringing the number of confirmed cases in the
state to 7. Public health interviews with affected individuals
revealed that they ate ground beef products from Whole Foods Markets
during the month of July 2008.

Based on this information the Massachusetts Department of Public
Health (DPH) is advising consumers not to eat any fresh ground beef
product purchased at Whole Foods Market between 2 Jun 2008 and 6 Aug
2008. This includes ground beef and ground beef patties from the meat
counter as well as from the prepackaged meat cooler. Any remaining
product should be thrown out. Consumers are also advised to check
their freezers for ground beef products they may have purchased last
month [July 2008] and frozen.

Officials from the supermarket chain have cooperated with staff from
DPH during the agency’s investigation to determine the source of the
contamination. Preliminary findings suggest that ground beef products
that were previously identified as part of a nationwide recall may
have entered the retail supply at Whole Foods during June and July of
2008 [see ProMED post E. coli O157 - USA (03): (OH, MI), ground beef
conf., recall 20080701.2010].

In July 2008, the United States Department of Agriculture (USDA)
announced the extension of a national recall for ground beef produced
by Nebraska Beef, Ltd. due to possible _E. coli_ contamination.
Nebraska Beef produces products under the Coleman brand name, and a
review of records from Whole Foods indicates that some of the stores
received product from the recall list. At this time, it is not known
why the food listed under the USDA recall was sold to the public
after the recall date.

DPH, USDA, and Whole Foods are continuing to investigate the outbreak
and will provide additional information as it becomes available.
Whole Foods has removed from their stores all ground beef product
from Nebraska Beef as a precautionary measure.

The Massachusetts cases range in age from 3 to 60 years. They include
residents of Middlesex, Suffolk, and Essex counties. They reported
becoming ill between 10-29 Jul 2008. At least 5 of the cases were
hospitalized.

[Whole Foods Market of Austin, Texas, is asking customers who may have
purchased ground beef from June 2 though Aug. 6 to dispose of the
product and return it to the store with the packaging or receipt for a
