Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.
At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."
Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.
A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.
"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Pineapple Breakfast Bread Abm Recipe #271918
I haven’t found a yeast bread recipe using pineapple so using another recipe I adapted it and it turned out very well. It is sweet and makes great toast. This makes a 1 pound loaf.

1 1/4 cups pineapple juice (I used canned)
3 cups white bread flour
2 1/2 tablespoons white sugar
1 teaspoon salt
2 tablespoons dry milk
1 1/2 tablespoons butter, cubed
1 3/4 teaspoons bread machine yeast
2/3 cup dried pineapple, chopped
1/2 cup walnuts, chopped (optional)
1. Place all ingredients, except the dried pineapple and nuts, into the bread machine using the instructions for your bread machine.
2. At the “beep” add the dried pineapple and the nuts if you are using them.
3. I used the basic cycle and the medium crust.

Bread Machine Argentine Cheese & Corn Bread Recipe #272707
This is based on a recipe from Madge Rosenberg’s “The Best Bread Machine Cookbook Ever Ethnic Breads”. She says, “Similar breads appear all over South America as far north as Venezuela. This version from the southern tip of the continent has enough color and taste to be eaten plain or with a meat broth or boiled beef.” I use it as I would a corn bread with chili; I’ve even had it with butter and jam for breakfast!

Large Loaf (1 1/2 Pounds)
2 1/4 teaspoons active dry yeast
2 1/4 cups bread flour
1 1/2 cups yellow cornmeal
1 tablespoon sugar
3/4 teaspoon salt
3 tablespoons parmesan cheese, grated
1/4 teaspoon ground black pepper
1 1/2 teaspoons ground cumin
3 tablespoons vegetable oil
1 cup water
1/3 cup green bell peppers, finely diced
1/3 cup corn kernels
1. Add the first ten ingredients to your bread machine in the order suggested by the manufacturer.
2. Process on the bread cycle.
3. At the beeper (or at the end of the first kneading if your machine does not have a beeper), add the bell pepper and corn.

Outback Steakhouse Honey Wheat Bushman Bread Recipe #272815
This is a copy-cat recipe for the delicious bread they serve at the restaurant.

2¼ hours | 15 min prep | SERVES 40 , 8 mini-loaves
1 1/2 cups warm water
2 tablespoons softened butter
1/2 cup honey
2 cups bread flour
2 cups wheat flour
1 tablespoon cocoa
1 tablespoon granulated sugar
2 teaspoons instant coffee granules
1 teaspoon salt
2 1/4 teaspoons yeast
1 teaspoon caramel coloring
3 tablespoons cornmeal, for dusting
1. Place all of the ingredients in the bread machine in the order listed, and process on dough setting. The dough will be a little on the wet side and sticky but if it seems too wet, add more flour. When dough is done, let it rise for 1 hour.
2. Remove from pan, punch down, and divide into 8 portions. Form portions into tubular shaped loaves about 6-8 inches long, and 2 inches wide.
3. Sprinkle the entire surface of the loaves with cornmeal, and place them on 2 cookie sheets. Cover and let rise for 1 hour.
4. Bake at 350 degreees for 20-25 minutes. Serve warm with whipped butter.

Baked Beaver Tails Recipe #278157
No this isn’t the ‘real’ animal, but a version of that used at the Winter Carnivals here in Canada.

Dough
3/4 cup milk
3 tablespoons sugar
1 teaspoon salt
1 teaspoon vanilla
1 egg
1/4 cup butter, melted
2 cups flour
1/4 cup flour
2 teaspoons yeast (quick rising)
Topping
1/4 cup melted butter
1/2 cup brown sugar
2 teaspoons cinnamon
1. Place ingredients for dough in breadmaker on dough setting.
2. Once dough cycle is completed, remove and cover for 10 minutes.
3. Form into 8 balls.
4. Roll each ball to 1/4 inch thickness in an oval shape.
5. Place on parchment paper on baking sheets, cover and allow to rest 15 minutes.
6. Brush with melted butter, and top with mixture of sugar and cinnamon.
7. Bake 20 minutes 350F oven.
8. Remove and ENJOY!

Oatmeal Molasses Bread Recipe #285341
I found this recipe in an old Taste of Home magazine. It was submitted by Ruth Andrewson. I have some aunts that LOVE this bread. It calls for bread flour, but I use 100% whole wheat with great results.

I created this for my bread machine, which makes two 1-lb loaves simultaneously (recipe is per each loaf). This is a delicious but not too sweet yeast bread. Excellent served fresh or toasted, with butter or cream cheese. ENJOY!

4. Note: Dough may appear too moist, even wet as the baking cycle begins, but this is normal; bread should come out fine.

Anadama Bread (Abm) Recipe #266375
This early American yeast bread has very traditional flavors. The cornmeal and molasses are typical of breads made in New England.

1. Combine first 5 ingredients in a bowl; stir well. Let cool slightly, and stir in egg.
2. Follow manufacturer’s instructions for placing cornmeal mixture and remaining ingredients into bread pan; select bake cycle, and start bread machine.

Vegetarian Spaghetti Sauce
2 Tbsp olive oil
2 small onions, chopped
3 cloves garlic, chopped
1 1/4 cups zucchini, sliced
1 Tbsp oregano, dried
1 Tbsp basil, dried
1 8 oz can tomato sauce
1 6 oz can tomato paste*
2 medium tomatoes, chopped
1 cup water
In a medium skillet, heat oil. Saut ¦Ã© onions, garlic,
and zucchini in
oil for 5 minutes on medium heat.
Add remaining ingredients and simmer covered for 45
minutes. Serve
over spaghetti.
* To reduce sodium, use a 6-oz can of low-sodium
tomato paste. New
sodium content for each serving is 253 mg.

Zucchini Brunch Bake
INGREDIENTS
1 cup biscuit baking mix
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon dried parsley
1/4 cup grated onion
4 eggs
1/3 cup vegetable oil
2 zucchini, thinly sliced
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8
inch baking pan.
In a large bowl, combine baking mix, cheese, garlic powder,
seasoning salt, oregano, salt, pepper and parsley. Stir in onion, eggs and oil;
stir well. Stir in zucchini. Pour batter into prepared pan.
Bake in preheated oven for 25 to 30, until a toothpick inserted into
center of the loaf comes out clean.

7 Up Chicken
6 to 8 boneless, skinless chicken breast halves
2 T. butter
1 can 7-Up Sprite works equally as well
1 tsp. seasoning salt
1 tsp. parsley flakes
Place chicken in bottom of crockpot. Add butter.
Mix 7-Up with salt and parsley. Pour over top. Cover and cook on LOW
for 6 to 8 hours.
EZ Garlic Teriyaki Chicken
Yield: 4 to 6 servings
1/2 cup Kikkoman Roasted Garlic Teriyaki Marinade & Sauce
3-pound broiler-fryer chicken pieces
Pour roasted garlic teriyaki sauce over chicken pieces in large
plastic food storage bag. Press air out of bag; close top securely.
Turn bag over several times to coat chicken well. Refrigerate 8 hours
or overnight, turning bag over occasionally.
Pour contents of bag into large shallow baking pan. Arrange chicken
pieces, skin side down, in single layer in pan. Bake in 350ºF. oven 20
minutes.
Turn pieces over and bake 25 minutes longer, or until chicken is no
longer pink near bone.
Golden Chicken Bake Makes 4 to 6 servings
1 chicken, cut up
Butter
1 can cream of chicken soup
1 t. minced dried parsley
Arrange chicken, skin-side down, in shallow baking dish. Place
generous dabs of butter over chicken. Bake at 375 for 20 minutes. Turn
chicken; bake 20 minutes.
Stir soup. Pour over chicken. Sprinkle parsley over top. Bake 20
minutes more.
Oven Fried Chicken
1/4 cup butter, melted
1/2 t. salt
1/4 t. pepper
1 broiler fryer, cut up
1 cup crushed cornflakes or 1/2 cup fine dry bread crumbs
Mix butter, salt and pepper. Brush chicken with butter mixture, then
roll in cornflakes or bread crumbs (you may even use 1 cup crushed
potato chips). Put chicken skin side up without touching in ungreased
large shallow baking pan. Bake at 375 until tender, about 1 hour.
Don’t turn. Season to taste with salt.
Serves 4
CHICKEN IN GRAVY
5-7 pieces chicken
2 cans cream of chicken soup(or cream of mushroom)
Rinse chicken, remove fat and skin.
Place chicken pieces in 13”x9” pan.
Spoon undiluted soup over the chicken pieces.
Bake uncovered at 325* for 1 to 1&1/2 hrs.
Rice Krispie Chicken
6 boneless chicken breasts
2 cups Rice Krispies, crushed
1 cup butter or margarine, melted
Dip chicken pieces in melted butter, then in cereal to coat. Place on
foil lined baking sheet. Season with salt and pepper. Pour remaining
butter
over chicken. Bake in preheated 350 oven for 45 to 60 minutes or until
chicken is tender and golden brown. Note: If you’re in a hurry, cut
chicken into
smaller pieces and it will bake faster. Also, add any seasoning you
would like to the cereal (onion, garlic, chili powder,etc

Probably a Zojirushi machine, which is expensive as bread machines go, but I've heard that they are well worth the dough (ha!). I've been keeping my eye out on eBay for a new Zojurishi, but haven't come across the right bargain yet.
I've got three nice breadmakers and they all do a fine job. Hard to imagine that the Zojirushi will make better bread, but it may well last longer than other brands.
When I get a little more time later I will post a couple of my favorite bread recipes. Thanks again!
