Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.

At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."

Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.

A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.

"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Use white or sweet setting, and light to medium crust setting.

Anadama Bread

1 c ;Boiling water
1/2 c Yellow cornmeal
1/4 c Molasses
3 tb Margarine; melted
2 tb Sugar
1 Egg; lightly beaten
3 c Bread flour
1/2 ts Salt
1 ts Dry yeast

Combine first 5 ingredients in a bowl; stir well. Let cool slightly and stir in egg. Follow manfacturer’s instructions for placing cornmeal mixture and remaining ingredients into bread pan; select bake cycle, and start bread machine. Yield: 1 (1 3/4-pound) loaf, 14 servings.

Autumn Harvest Bread

1 1/2 lb loaf:
1/2 c Carrots; diced, cooked, pureed
1/2 c Canned pumpkin; or diced banana squash, cooked, pureed
1/2 c Unsweetened applesauce
1/4 c Carrot water; the water from which you cooked the carrots
1 1/2 c Whole wheat flour
1 1/2 c Bread flour
1 1/2 ts Salt
1 1/2 tb Butter; or margarine
2 tb Honey
1/4 ts Allspice; ground
2 ts Red Star yeast

Place all ingredients in bread pan, press light crust setting, and press start. After baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing.

Bailey’s Irish Cream Bread

1 1/4 c Water, very warm
1 pk Yeast
1 c Oats
3 c Bread flour
1 ts Salt
1/3 c Honey
2 tb Bailey’s irish cream ; or to

Put ingredients in pan in order listed, Select “white bread” setting on machine and press Start. The bread doesn’t rise much, but the texture is great.

Banana Oatmeal Bread

1 c Old-fashioned rolled oats
1 Egg
1/4 c Sour cream
2 tb Water (for Welbilt/Dak only)
2 c Sliced ripe banana
2 c Bread flour
1 c Whole wheat flour
1 ts Salt
1 tb Butter or margarine
2 tb Honey
1 tb Nonfat dry milk powder
1/2 ts Ground cinnamon
1/4 ts Rated nutmeg
2 ts Red Star brand active yeast

*NOTE: For Panasonic/National machines, use double amount of yeast for 1-1/2 lb size loaf.

Place all ingredients in bread pan, select Light Crust setting, and press Start.

After baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing.

Rice Crispy Bread

9 oz Water
1 tb Veg oil
1 3/4 c All purpose flour
1 c Ground Rice Crispies
1 ts Sugar
1 ts Salt
1 1/2 ts Yeast

It takes about 2 cups of Rice Crispies to make 1 cup of ground rice in the blender.

Add liquid ingredients, then dry ingredients, then yeast. Set machine for regular/basic and medium crust. Watch the first mixing and add more flour if necessary for the dough to form a ball that lifts from the tub.

Rich Dough

280 ml Warm water
2 tb Milk powder
3 tb Sugar
3 tb Margarine
1 Egg, large
1 ts Salt
3 1/2 c White flour
2 ts Active dry yeast

Add ingredients to bread bin/pan in order of list or as suggested by manufacturer. Select “dough” cycle. If your cycle lasts longer than 1 1/2 hours, stop it and remove dough. Roll out for cinnamon buns or plain rolls and let rise before baking conventionally. Note: This recipe can have the white flour reduced and whole wheat flour added to replace it.

Rice Pudding Bread

2/3 c Water; lukewarm
3 c White bread flour
2/3 c Cooked white rice; cooled to room temp.
3/4 c Sour cream
2 tb Brown sugar
1 1/2 ts Salt
1/2 ts Allspice
1 1/2 ts Cinnamon
1/2 c Raisins
1 1/2 ts Vanilla
3 ts Active dry yeast

Add ingredients according to bread machine manufacturer’s instructions.

Makes a 1.5 pound loaf.

Foolproof Rice Bread

1/2 tb Yeast
2 1/4 c Bread flour
1 tb Sugar
1/2 tb Salt
1 tb Oil
1 c Rice; cooked
1 c Water

Bring all ingredients to room temperature and pour into bakery, in order. Set “baking control” at 10 o’clock. Select “white bread” and push Start. For a richer bread, use 1 egg and 3/4 c water instead of 1 c water. In hot, humid weather, use 1/8 c less water. WARNING: the dough will look a little “wet.” DO NOT ADD EXTRA FLOUR.

Buttered Popcorn Bread

1 pk Yeast
1/4 ts Ginger
1/4 ts Sugar
2 1/2 c Better for Bread flour
2 ts Gluten
1 tb Butter Buds salt
5 c Popcorn;popped/battered/ salted and crushed, crushed by hand or in a food processor until reduced to 2 1/2 cups
1 tb Popcorn oil;or veg. oil
1 1/2 c Very warm water

Add all the ingredients into the pan in the order listed, set darkness control at 11 o’clock Select white bread and push “Start” Try toasted slices spread with Kaplan’s Better Than Butterwhile watching movies on your own TV screen.

Berry Bread

1 1/3 c Rasberries
2 tb Oil, vegetable
5 tb Syrup, raspberry
2/3 ts salt
2 c Flour, whole wheat bread
2 c Flour, bread
2 ts Yeast
1 3/16 c Walnuts/pecans; chopped

Add all ingredients in order except nuts. Begin cycle and after first kneading add nuts. Resume cycle.

Black Russian Bread

1 tb Vinegar
2 tb Vegetable oil
1 c Water
1 c Rye flour
1 1/2 c Unbleached white flour
1 ts Salt
2 tb Gluten or 3 teaspoons lora brody’s bread dough enhancer (optional for a higher loaf)
1 ts Sugar
1/2 c Oat bran
2 tb Caraway seeds
1 ts Instant coffee (powder or granules)
1 ts Minces dried onion
1 1/2 tb Unsweetened cocoa
2 1/2 ts Yeast

the ingredients in the machine, program for Bread, Whole Wheat, Basic Wheat, Whole Wheat/Multigrain, or Wheat, and press Start.

Makes 1 1/2 lb. loaf

Blueberry and Oat Bread

1 Lb Loaf:
1 1/2 ts Yeast
1 3/4 c Bread flour; PLUS 2 T
1/2 c Rolled oats
2 tb Wheat germ
1 tb Vegetable oil
3 tb Brown sugar
1 ts Salt
3 tb Unsalted butter
2/3 c Water
3/4 c Blueberries

Add ingredients except the blueberries in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer’s directions.

At the beeper (or at the end of the first kneading in the Panasonic or National), add the blueberries.

Blueberry Bread Machine Made

1 pk Yeast
3 c Bread flour
1/2 ts Salt
2 tb Sugar
4 ts Applesauce, unsweetened;
16 oz Frozen blueberries; thawed a
; reserve liquid
1/4 c Retained juice; at room temp
1/4 c Water; approx., 90 deg f

In order listed, add all dry ingredients into pan. Put berries in with dry ingredients. For a 1 1/2 lb. loaf, my machine needs 300 cc of liquid at 90 deg. F. I select thin top crust, then start the machine.

Blueberry Bread

1 pk Yeast
3 c Bread flour
1/2 t Salt
2 T Sugar
1 T Butter (or margarine)
1 cn (16 1/2 oz) blueberries well drained, reserve the liquid
1/4 c Retained liquid
1/4 c Water (approximate)

In order listed, add all dry ingredients into pan. Put well drained berries into a 2 cup measuring cup, add 1/4 cup of retained juice and enough water to equal 1 1/3 cups. Select white bread and push “Start”. NOTE: All ingredients should be at room temperature. This can be mixed on manual of the bread machine. After Second kneading, remove dough for machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour. Bake at 350 f. for 35-40 min.
