Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.
At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."
Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.
A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.
"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Spicy Cheese Bread ABM
1 pound loaf
This is a nice loaf of bread that makes great
toast. I used the dough cycle
and baked this in the oven at 350° for 30 to 35
minutes. I received the
recipe from another group and it was posted by
John Ross.
Ingredients:
2 1/4 cups bread flour
2 tablespoons sugar
1 tablespoon powdered milk
1 teaspoon salt
1 tablespoon butter
1 teaspoon dry mustard
1/4 teaspoon black pepper
1/2 cup cheddar cheese, shredded
1 tablespoon Worcestershire sauce
7/8 cup water
1 teaspoon yeast
Place all ingredients in your machines fully
assembled pan and in the order
specified by your machines manufacturer. Select
the Basic or White cycle
and press start. After the first 10 minutes of
kneading check the dough and
make any necessary adjustments.

Place all dough ingredients in machine and
program for knead and first
rise. Press start. The dough will be quite firm
but it should be moist
enough to hold together. Make the filling while
the dough is rising.
Place the potato cubes in a small saucepan and
cover with water.
Bring to a boil over medium high heat, lower
the heat to medium and
continue cooking for 10 minutes, or until they
have slightly softened
but are not cooked through. Add the peas to the
boiling water for the
last minute of cooking. Drain the water from
the potato cubes and
peas.
Heat the oil in a large frying pan set over
medium high heat and add
the onions, garlic and ginger. Saute until the
onions are
translucent. Add the potato cubes, peas,
coriander, cumin, pepper and
salt and stir until well mixed. Remove from the
heat and cool
slightly. Turn the finished dough out on a
lightly floured surface
and divide it into 8 equal balls. Let the balls
rest 10 minutes.
Preheat the oven to 350øF with the rack in the
center position.
Lightly spray a large baking sheet with
vegetable cooking spray. On a
lightly floured surface, roll each ball of
dough to a 7” circle,
rolling from the middle toward the edge.
Distribute the filling
evenly among the circles, about 3 heaping tb
for each one. Lightly
moisten the edge of each circle with water and
fold over to form a
semicircle. Press the edges together firmly.
Fold the pressed edge
inward toward the filling and press with you
fingertips to seal. Lift
the samosas onto the prepared baking sheet and
generously brush the
tops with the egg glaze. Bake the samosas for
15 minutes, or until
they are a rich golden brown. Serve hot from
the oven.

Using your machines timer does come in handy.
However, there are a few
things you need to understand before you do use
it.
Use only tried and true recipes. If you have not
made the recipe in the
machine before, do not attempt it on the dough
cycle. If something
should happen and the dough is too dry or wet,
you will get a flop.
Also, if the dough is too dry, you could damage
the motor or cause the
unit to walk off the counter.
Do not use any ingredients that spoil at room
temperature. These include
eggs, milk, cream, meats or anything you normally
store in the fridge or
freezer. The only exception to this is butter or
margarine. If you need
to use milk or eggs, then you can use powdered
whole eggs and powdered
milk.
Make sure to place your machine as far from the
edge of the counter as
possible.
This is to diminish the chances of the machine
falling off the counter.
Good machines don’t walk. Bad machines don’t
generally walk, unless the
dough is too dry.
Hawaiian Bread
1/2 c. mashed banana
1/2 c. crushed pineapple, undrained
1 egg
1/4 c. milk
1/4 c. margarine, softened
1 tsp. coconut extract
1/2 tsp. salt
1/3 c. white sugar
1/2 c. instant potato flakes
3 c. bread flour
1 1/2 tsp. active dry yeast
Place ingredients in the pan of the bread machine
in the order
recommended by the manufacturer. Select Light
setting; press Start.
Makes 1- to 1 1/2-pound
loaf.
Craisin Bread ABM
1 1/2 pound loaf
This is a nice toasting bread and I liked it for
breakfast. It is not real
sweet but still good. I received the recipe from
another group and it was
posted by John Ross. I cut the water back to 1/4
cup and then added more if
I needed it. I used the dough cycle and then
baked this in a 350° oven for
30 to 35 minutes.
Ingredients:
2 1/4 teaspoons yeast
2 cups bread flour
1 cup whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons salt
1/3 cup milk
1/2 cup water
1/3 cup oil
2 eggs
1 teaspoon walnut extract
2/3 cup dried cranberries, (Craisins)
Place all ingredients in your machines fully
assembled pan and in the order
specified by your machines manufacturer. Select

BREAD MACHINE APPLE OATMEAL BREAD
INGREDIENTS:
1/2 cup Old-fashioned rolled oats
5/8 cup water
1/2 cup Unsweetened applesauce
2 3/4 cups Bread flour
1 1/2 teaspoons Salt
2 tablespoons Brown sugar
1 1/2 tablespoons dry milk powder
1 1/2 tablespoons Butter or margarine
1/2 cup Raisins
2 teaspoons Ground cinnamon
2 teaspoons active dry yeast
DIRECTIONS:
Place all ingredients in bread pan. Select Light
Crust setting, and pess
Start. After the baking cycle ends, remove bread
from pan, place on cake
rack, and allow to cool 1 hour before slicing.
Yield: 1 1/2 pound loaf

This barely sweet, fruity rye tastes good with
scrambled eggs or in a
turkey sandwich. For tea sandwiches, slice
thin and spread with cream
cheese and toasted sliced almonds.

2 cs. cooked and drained lentils
1 c. whole wheat bread crumbs
1/2 c. wheat germ
1/2 tsp. salt
1/2 onion, grated
1/2 tsp. celery seeds
whole wheat flour for coating
3 tbsps. vegetable oil
Mash the lentils slightly. Add the bread crumbs,
wheat germ, salt,
onion, and celery seeds. Mix well. Form the
mixture into 8 patties.
Coat with flour. Heat the oil in a skillet and
fry the patties on both
sides until browned.

.Thought this was interesting. Chuck
a.. Fine china was packed in barrels of flour and
cornmeal. This packing technique was designed to
prevent family heirlooms from being destroyed
during the journey. In theory this was a great
idea, but there was one serious drawback—usually,
the travelers had to eat the flour and cornmeal
during the trip, and most of the dishes ended up
breaking anyway and had to be discarded along the
trail.

Baked Apple Crumble
4-5 cups sliced apples
1/2 cup brown sugar
1/3 cup sifted unbleached flour
1/2 cup rolled oats
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 cup butter, softened
Spray a 8x8 inch pan. Place sliced apples in pan.
In mixing bowl combine dry
ingredients. Cut in butter and mix until crumbly.
Layer crumbles over
apples. Bake at 375 degrees for 35 minutes.

Mint Chocolate Macaroons
2 cups brown suger
1/4 cup milk
1 tsp vanilla
1 tsp peppermint extract
4 cups rolled oats
4 Tbsp. cocoa powder
Mix the suger & milk in a pot and bring to a
boil.
Remove from heat and stir in the vanilla &
coconut
extract, and then the rolled oats and cocoa. Mix
until everything is well coated, will make a very
stiff dough. Spoon out onto a cookie sheet and
refridgerate for 20 minutes.

Your copy machine is broken, share a thought for me, my entire electric stove has quit........I don’t have an oven.
So will learn to do the cooking in a crockpot/breadmachine and a small hot plate, if it works.
