Jumbo pack of drumsticks.
Baking Pan sprayed with non-stick.
Badia Spanish Mojo applied liberally over top of chicken.
Wrap 3 spuds in foil and toss them into the oven around the baking pan.
Bake at 350 for 40 minutes. Check to be sure meat is not still pink and that potatoes are softened.
Eat and enjoy.
Tomorrow - salad in a bag with leftover chicken made into sandwiches. If feeling extra inspired make chicken salad sandwiches. Otherwise, light mayo, mustard, hand-shredded chicken meat, salt and pepper on whole wheat.
Voila!

Get some already cooked chicken strips from Mr. Perdue, some flour tortillas, already grated cheese in the bags and some salsa. The kids can put whatever they want in the torillas and roll em up! They could even eat the chicken without the tortilla, or any combo thereof! You could even chop some onions and peppers for yourself, saute them or zap em in the micro to soften them up and put them on YOUR fajita, or burrito, or whatever you want to call them.
Easy, but not particularly greasy!
Of course, steak or boneless chicken breasts on the grill are always good, too. Get some frozen steak fries and some already bagged salad. Ready to go in no time!
