Morning...
I'm so tired this morning. Probably because I worked out last night - did a long hard walk on the treadmill. 2.5 miles. Dad rented "The Last Samurai" to watch while he runs, so I popped it in and just started walking.
Then I got done and the internet wasn't working right, so I spent time with the family before watching anime and going to bed. Not a bad evening. Very quiet. Ugh, it's only Tuesday.

I found a recipe for flaxseed meal bread and made it last night. Edited the recipe slightly since I think it would have been wayyyy too sweet for my taste...it called for quite a bit of Splenda PLUS Splenda syrup (which I don't have anyway). It came out almost like a banana bread or coffee cake, and very tasty. Odd mouth feel, though. Doesn't dissolve in the same way as wheat flour bread.
I had a little slice with my eggs this morning for breakfast. Made a nice meal!

Good morning! I need to get another book on tape so I can stand ta walk on the treadmill on rainy days! I haven't been walking when it's wet...and it's been wet a lot.
On the bright side...I'm wearing size 10 jeans today! It's not really that much of an accomplishment since it's a brand I know runs large, and my slim-fit size 12 Wranglers are still too tight to wear in public, but I CAN zip them now...I couldn't a month ago.
I'm down almost 15 pounds from Entmoot, which was my heaviest weight ever.

Yep, my almond bread recipe was too sweet...I cut the Splenda by half. Makes me wonder about the people that design these recipes...maybe they don't taste sweet the same way I do!
What's the carb count for the bread? Do you know? You have the recipe handy?
Steve has lost almost 30lbs doing Atkins. People started to notice at 25lbs. I handed him a 25lb bag of flour a while back at Sams and said "Well, that's how much you used to carry around all the time."

Here's the information I have on it:
spongebob's flax meal bread
dry
===
2c flax meal ( Bob's Red Mill has the lowest carb)
1c nuts/etc.
1/2c Splenda (box, not packets)
1tsp baking powder
1tsp baking soda
wet
===
5 eggs (beaten)
8T sf syrup w/Splenda
5T vegetable oil
preheat oven to 350F/gas mark 4
mix together all dry ingredients in a bowl, then in a separate bowl, mix all wet ingredients. fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!).
immediately transfer batter to Pam/etc-sprayed loaf pan (I've had better results not waiting the 5min. I've seen suggested - baking soda is active immediately when wet, right?).
bake at 350F for 35min. or until it passes the knife/toothpick/etc. test.
remove from pan immediately and cool before slicing.
I didn't put a whole cup of nuts, though. Just put a handful of slivered almonds. I think it would be good without ANY nuts if you aren't to that point. I also used just a coupla packets of Splenda and put milk in place of the liquid Splenda - you could probably use either water or a cream mixture. And I added a bunch of cinnamon, which I liked a lot!
I have no idea why it was labeled Spongebob's. I assume someone with that screen name originated it?

...maybe they don't taste sweet the same way I do! More likely it's because you don't overdo the sweets. So when something is vey sweet it hits your senses more. Same thing with salt. Keep it out of your system and you notice it more.
I used to swill sweet (with sugar) ice tea like crazy. Now it makes me gag.

Wow, I'm really impressed. I'm up a little from where I was last month, but it's mostly water... I'm still a fairly large 12 but I think I can get to 10 in a month or so.
I'm low-carbing this week, taking Sunday off, and then hitting it really seriously starting Monday. Plus I intend to get the exercising back to where it should be. I'd really, really like to drop these last 15-20 pounds by August....

I'm noticing that even just a few weeks into this, things taste...different maybe isn't the word. But I notice tastes more, kinda. Like the strawberries I mentioned...I can't imagine sweetening them. They were soooo sweet on their own. And on my sister's birthday I cheated a little...sorta, since I'm allowed the occasional sweet now that I'm past the first phase. She had pineapple upside-down cake, and though I didn't eat a piece, I did have one bite. It was sooooo sweet that one bite was plenty. Didn't taste BAD...just very strong.

I've got another twenty or so to go, too. So I'm not getting all that excited. And honestly, I'm really a 12 still. May always be, for the most part...even though my waist is smaller than it was, I still have big hips and always will. Ah well...it's not a bad shape! ;-)

Yep. Wife still sweetens strawberries if'n I don't get to 'em first. And I grew up putting salt on watermelon. Can't imaging doing that now.
