Tenderloins usually are that size...kinda roundish and about 2 inches thick.. I'm sure it's okay baked!
Pork loins are hunks of meat and not as tender as a tenderloin. Both cuts don't have much of any fat which is why they tend to dry out especially if you overcook them.

Ok...I hauled that hunk of meat out of the oven and am now cooking it, sliced into medallions in butter in a skillet.
I'll make a gravy out of the butter, load the whole thing into the crock pot and warm it up in the afternoon tomorrow for Steve to serve while I'm at the Passion.
Excellent! I already feel better about it.

Ok...
I sliced them up, fried them in some butter real quick, just enough to brown them. Then I took them out and since there wasn't too much drippings, I added two tbsp of bacon fat (that I filter through a coffee filter, you know?) to the skillet, two tbsp of flour. Made a nice dark roux out of that. Then added two cups of milk. Made a great cream gravy!
I added to meat back into the gravy and I'm letting it simmer for a while.

Several of my siblings are going tonight. I'll be interested to hear what their reactions are.
I'm going with the big group from the parish on Sunday evening. Assuming I can get a ticket.
It's going to be here for three weeks, so I should make it at some point, even if I don't this week.

I went ahead and put it in the slow cooker. The skillet was cooking to fast, and I even had it up on three stacked burners!
It smells heavenly.
Steve can make some rice, open up a can of corn and have supper tomorrow.
I so rarely leave him home alone...I wanna make it REAL easy on him!

I was going to wait until next week so the crowds would be less. If I go by the "buy tickets online" thing, not all the shows are sold out yet so I expect I'll be able to get in. It looks like the nearest theater is showing it on 3 screens.

Even after Entmoot, the idea of a theater devoting THREE SCREENS to a single movie just boggles my mind!
I wish I could show you guys our theater! But we do have a theater, and it IS playing here, which I didn't think it would.
Downside is the stupid theater won't sell advance tickets at all. So...waiting in line is required for everything. It's frustrating.

Hehehe....for ROTK I was lazy...OB got the ticket for me. For the second ROTK show, I just showed up at the theater and bought one...didn't have no steenkin' line.
