Agree that Charlie’s is good. Please more info on Tampa! I have a 4 night business trip coming up.
However, in recent years, I have come to like the Harris Ranch in Coalinga, Calif. If you are southbound on Interstate 5, about five miles north of the restaurant you will pass the herd of beef cattle that will soon be on the diners' plates. They also feature a butcher shop where you can purchase cuts of beef to take home and cook.
Another steakhouse that I recommend is the Hitching Post in Casmalia, Calif.
Nobody mentioned Brazilian Churrasco? Like Texas de Brazil or Fogo de Chao?
Cattleman’s in OKC if you’re ever there.
Yup..I’ve eaten there a few times ..never had steak there..love the long family style tables..met some nice people...and had to move a few times also..

Not bad if you like a lean steak but for heavily marbled cuts that slab is not capable of charring a steak. I tried it with a ribeye and it could not crisp or char the fat. It was barely able to get it to melt.
Some of the best steaks I’ve ever had are at my local Texas Roadhouse.
Yeah, I know it’s a chain, but these were everything a good steak should be — large, tender, full of flavor and grilled to perfection.
The absolute rock-solid best steak dining experience I EVER had, was while staioned at Ft. Bliss TX back in the early 1990’s.
The place was called The Great American Land And Cattle Company, north of El Paso.
They had the 72-oz Steak Challenge - eat the whole thing, fixings included, and your whole party ate for free.
I won. Barely....
Morton’s and Fleming’s are excellent choices for the larger chains. Ruth’s Chris has really been lacking the last few years.

Stony River Steakhouse in GA for me but I’ve never been to Bones.
Grass fed cattle are leaner than corn fed cattle. Plus most of the time grass fed also means grazing which leads to tougher meat. So I must disagree and say the best steaks are corn fed cattle lot. That yields a well marbled tender steak. I don’t give value judgements to my carnivorous habits. “Good Carnivore”? That is funny! What is a “bad carnivore”?
