"I am in weekday breakfast rut! I need something I can either easily carry or eat/prep quickly. I swear I've had every combination of Publix/Other brand bagels + various cream cheese spreads....gone through tons of cereals, oatmeals, frozen foods. Did the hot pocket thing and/or jimmy dean breakfast d'lite frozen sandwich things for a while.
I'm not against precooking things either! I've hardboiled eggs the night before and peeled them, or cooked noodles or mashed potatoes and just warmed a small portion in the morning. But I'm tired of all of the above. What do you eat for breakfast?"
Naw, bacon and eggs. :)
Rib eye steak and eggs over easy with browned potatoes or hash browns with plenty of habanero sauce, whole wheat toast. Coffee, lots of coffee. A cheerful waitress/cook is what makes breakfast taste so good.
Is one minute long enough to soften the oats or is it an “al dente” kind of texture?
It’s long enough, they are not really soft, they just soften a bit and that makes it taste nutty and no slime. It’s really great.
I forgot to tell you, if you use the really thick cut oats, let them soak for about 10 minutes before you nuke them. Don’t use Quick Oats or Instant.

I prefer Vitamin P to get my day started.
It is possible to do prep work to make breakfast quicker. Some things can be frozen, and used over a couple of weeks.
First meats: Cook up a box of your favorite sausage patties, cool, stack with wax paper in between, put into zip lock freezer bag and place in freezer. Purchase a bag of frozen uncooked biscuits. Cook a biscuit or two in the toaster oven (while you take a shower, if rushed for time). Zap a sausage patty in the micro wave. Tastes much better than those frozen Jimmy Dean biscuits. You can also use these to have a breakfast of sausage, eggs, and biscuits or toast.
Slice your cooked ham, stack with wax paper in between, and freeze in zip lock bags. The ham may be thrown directly on to a grill(or Iron skillet) to reheat while you are cooking hash browns etc. You can have a ham and biscuit sand-which, or a full breakfast platter of ham and eggs etc.
Bacon of course is easy to just cook on paper towels and microwave safe plate in the microwave.
Make your own hash-browns. Cook your potatoes by steaming on the stove or in the microwave. Let them cool. Remove the peels(they slip right off). Use a shredder to make the shred style or vegematic to make slices. They will keep in a Ziploc bag in the fridge for several days. Cook with a little oil in an iron skillet or grill.
Sometimes I just stick a couple of cooked potatoes in the fridge. Chop up some onions and green peppers the night before. Take a slice of ham from the freezer and thaw overnight in the fridge. Next day, chop and cook potatoes till brown on both sides (chop up the ham while potatoes are cooking).
Scoot potatoes to the side of the grill or skillet, add a little oil and stir fry the onions and peppers a little then add the ham and finish cooking. You can have any style egg on the side, or scramble the eggs and add to make an omelet.
We had rice for breakfast a lot when I was a kid. We ate it with butter, sugar, and milk. You can have a hot bowl of rice ready in the morning by using your crock-pot. Plug it in on the lowest setting, with the correct amount of water, at bedtime, and it will be ready the next morning. Works with steel cut oats too.
Make your own pancakes the night before, zap in Microwave. Ready in seconds. You can also make a big batch to freeze.
French Toast is easy enough to do - no need to prep the night before. If you have a two burner grill or electric grill, you can cook 2-3 slices at once.
I could go on, but this is probably enough for now.LOL.

My favorite breakfast is cheese omelet with mushrooms and onions with a side of home fries and bacon - Or else just plain old cream of wheat when Im in a hurry. However, on special days (like Christmas morning) we always have Bacon-Cheese Brunch. YUM!!
BACON CHEESE BRUNCH
1 lb. bacon
1 can (20 oz.) pie sliced apples, drained
2 tbsp. sugar
2 c. shredded Cheddar cheese
1 1/2 c. Bisquick
1 1/2 c. milk
4 eggs
Grease a 12 x 7 x 2 inch baking dish. Fry up bacon and crumble it. Spread apples in dish. Sprinkle with cheese and bacon. Beat remaining ingredients with hand beater until smooth; pour over top. (It will be runny). Bake uncovered until knife comes out clean, about 30 to 35 minutes. Makes 8 to 10 servings.
It’s just some nice carbs to get you going in the morning - what’s the difference: half a loaf of bread or wonderful, leftover ravioli?! Taste, that all.
