To: Yardstick

My favorite breakfast is cheese omelet with mushrooms and onions with a side of home fries and bacon - Or else just plain old cream of wheat when I’m in a hurry. However, on special days (like Christmas morning) we always have Bacon-Cheese Brunch. YUM!!

BACON CHEESE BRUNCH

1 lb. bacon
1 can (20 oz.) pie sliced apples, drained
2 tbsp. sugar
2 c. shredded Cheddar cheese
1 1/2 c. Bisquick
1 1/2 c. milk
4 eggs

Grease a 12 x 7 x 2 inch baking dish. Fry up bacon and crumble it. Spread apples in dish. Sprinkle with cheese and bacon. Beat remaining ingredients with hand beater until smooth; pour over top. (It will be runny). Bake uncovered until knife comes out clean, about 30 to 35 minutes. Makes 8 to 10 servings.

So it’s bacon-y, cheesy, and a little bit sweet — sounds a good combo.
