I work for the USPS in Western New York. We are sending all ballots to Buffalo in the normal mail stream for processing. We are even coming in this Sunday to collect the mail in the collection boxes and drive it to Buffalo ourselves.
I agree that sending ballots through the mail is foolish but the Postal Service is doing its best to accommodate what our betters have decreed.

His recommendation was about .9g/pound
That matches what I’ve read. I try for ~100 grams/day. I’m 71 and after a recent attack of pancreatitis, I had to give up milk (just couldn’t digest it any more) and found a vegetable (pea) protein shake that is quite tasty and provides about 32 grams/bottle.
I also switched from mostly beef to chicken and pork because of the same digestion problems. The results have been excellent. I’ve put on muscle and my energy level soared.

how will USPS verify the accuracy of these descriptions?
The USPS won’t verify the contents.
Any verification will be up to Customs in the receiving country. This not an American rule; it is dictated by about 30 foreign countries. Shippers have always been required to disclose the contents of packages heading abroad.
This rule requires more specific descriptions, e.g., “shirts” instead of clothing.
