We can track our history back to the beginning, long before Luther began his rebellion. Look at the father’s of the church, the early Christian practices, the sacrament, the councils.

The Catholic-Orthodox-Oriental-Assyrian Church was founded at the Pentecost.
This is clear in the writings of Justin Martyr, the writings in the Didache, the various councils pre-4th century etc.
This is clear in the way the Assyrian church i.e. the Ancient Church of the East retains similar beliefs and structure as the Catholic and Orthodox do - despite being out of communion since 250 AD when the Sassanid empire conquered Ctesiphon and when teh Sassanid Persian emperor did not want Christians similar to those in Rome.
The Catholic church was definitively formed well before the 4th century and you have writings - both from Christian and from non-christian sources to validate that
