How Long and at What Temp. Should I Cook a 19 Pound Turkey?

Every year I look up recipes for how to roast the turkey, and there are so many variations out there of temperatures for the oven and what temperature the thigh meat should be to determine if it's done.
My turkey is out and ready to go and people are coming at 3pm.

What does the turducken taste like? Does the meat taste like individual pieces of turkey,duck and chicken or does it taste like a unique kind of fowl? John Madden opened one up, with his bare hands, at half time on MNF-his bird fell apart and looked very unappealing-perhaps his caveman cutting technique was the reason.Do the layers stay separate when the bird is carved ? Is there stuffing between the layers?It's got it's own unique taste - but it's good! You can see the individual layers, but not necessarily tell them apart on your plate. The only thing that was discernable as separate was the stuffing; which in our case was a cajun sausage dressing. It was fantastic.
The only downside was when I started carving. Because it looks like a full-sized turkey in the pan, I immediately began to carve it like a turkey, i.e, slicing across the breast. Just remember: it's boneless! Slice all the way down & through - you won't hit any bone/gristle.
If you get a chance to get one - do! It's great!

If you cook it breast side down it doesn't dry out....and no need to baste it.

Here in the forge we cook them at 2100 degrees for about 2.5 minutes. Give that crusty exterior known as Pittsburg style while the interior is still pink and moist.
I understand the latest thing is "Drunken Turkey Aussie style"
Now in "Drunken Chicken" the bird is set upright over a tallboy can of your favorite quality malt beverage on the
barbeeQ.
In "Drunken Turkey", again the bird is set upright over a giant can of Fosters. The steaming malt does wonders.

Use a meat thermometer stuck into the thickest part of the thigh or breast. Poultry is completely cooked when the internal temperature reaches 180 degrees F.
