Here is a recipe I have been wanting to try for years. A friend makes these and they are so tasty.
PERSIMMON COOKIES
1 cup sugar
1 stick BUTTER
2 eggs, beaten
2 cups Hachya persimmon pulp (to get pulp, cut off stem end, cut fruit in half and push the soft flesh through a strainer-discard seeds and skin)
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 cup chopped nuts
1 cup raisins
1. Preheat oven to 350 degrees.
2. Cream sugar and butter. Beat in eggs and persimmon pulp. Add flour, salt, baking soda and spices. Fold in nuts and raisins.
3. Drop spoonfuls on a greased cookie sheet and bake 10-12 minutes.

If fudge does not "set up" and she has been making it for 150 years, she is probably not beating it enough (15 minutes minimum) or she is not cooking it long enough. Buy her a candy thermometer and/or give her a hand with the beating. After all those years, she is probably loosing strength to beat.
For an absolutely positively no fail modern fudge, there are recipes all over, on the back of choc. chip packs, on the back of marshmallow liquids-you just mix and cook in microwave. Easy and yummy too.

Here's a family favorite - Christmas or ANYTIME!
Candy Cane Chocolate
1/3 cup semi-sweet morsels
1 pound white chocolate
3/4 Cup finely chopped candy canes (about 6 large canes)
Line jelly roll pan with foil. Melt white chocolate in a double boiler or in microwave (30 second bursts on high until white chocolate is melted and smooth). Stir crushed canes into white chocolate and spread onto foil. Melt morsels the same way and drizzle over pan. Cool one half hour in the fridge or 2-3 hours at room temperature. When firm, break into bite sized portions. VERY Yummy!

LOL... One year my sister decided to make rum balls and rum cake and mail them to everybody. When I opened my mail box the fumes about knocked me overI just finished telling my daughter about a funny thing that happened to me when I was a Senior in high school. There were four of us who had choir right after lunch so we would always eat together, and once a week we would have a 'community lunch' where each one of us would bring a particular part of the meal; sandwiches, chips, dessert, etc. Near Christmas, one girl brought Bourbon Balls wrapped in foil. When she opened the package in the warm cafeteria, all the teachers in the room immediately looked up to see from where the aroma came. We had a table of football players next to us, and they scooted their chairs over looking for handouts! Here's my variation of a recipe from my Mississippi Cookbook!
BOURBON BALLS
2 - 1/2 cups finely crushed vanilla wafers
1 cup powdered sugar
1 tablespoon cocoa
1 cup finely chopped pecans (you can use walnuts,if desired)
1 cup coconut (if desired; I don't use it, just add a few more pecans!)
3 tablespoons corn syrup
1/4 cup bourbon or wine
powdered sugar (to coat balls)
Mix the first 4 ingredients, and if desired, coconut. Add courn syrup and bourbon. Mix well. Roll into 1 inch balls. Roll in powdered sugar. Yields about 6 dozen balls.

Cookies are one of the easier things to make IMO but you have to know your oven. Try cooking for different periods of time and raising or lowering your oven temp.
And if you ever get an opportunity to invest in a convection oven, do so. You will never fail at cookies again..This I promise you.

Sweet Christmas Trash 1 box of each cereal: Wheat,corn and rice chex; fruit loops 1 pkg. pretzels 3 jars of roasted peanuts 5 pkgs. of almond bark Mix dry ingredients together in large bowl. (I use 4.) Melt almond bark in microwave until warm and creamy. Coat pieces evenly and dry on wax paper. Break into chunks and package in your favorite Christmas ware. This goes a long way in small Christmas tins for friends.

I second your sentiments. Great thread. I can't wait to try the cookies done on the waffle iron and several others, the persimmon cookies, and... well, a whole bunch more, just can't remember them all right now. Today it was great just sitting here reading them all. Seemed to satisfy my sweet tooth anyway.
