They aren’t as good as animal fats. They have to be artificially made. All except olive oil which is good.

No such thing as oils from vegetables. It is a seed oil.

another plus in my book is that 100% avocado oil mayo has a slightly nutty flavor, unlike flavorless soybean oil mayo; though i know some people like the flavorless kind the best [probably because that’s what they’ve eaten all their lives]

Seed oils are good to fatten animals. Easy to verify. What else do you need to know?
There is a mountain of evidence that omega 6 fats, the main component of most seed oils, are harmful. They make the animals in the experiments get fat and develop cancer.
There are many types of sunflower oil. High oleic sunflower oil is similar to olive oil.
I ditched most ofthe seed oils (especially canola) before 2020… and it had nothing to do with RFK Jr. although I have been deep frying in peanut oil. Besides that we only use Butter, Olive oil and Coconut oil. I recently finished up the jug of peanut oil and just recently made my first batch of beef tallow to replace it that I have not even tried yet.
They are great for soap making though.
Because I wear dentures I can no longer eat corn on the cob. I sure do miss an ear of Silver Queen. My late hubs used to have a job that required he deliver glass to the towns around Lake Okeechobee once a week. He would bring back bushels of corn for family and friends. That was some yummy corn.
But feed corn, yuck!

I’d like to make mayo from scratch, as the French generally do; but I’m not really comfortable with raw eggs. We used to routinely have pasteurized eggs in the supermarkets here, but I haven’t seen them in the past few years.
(I know there’s a way to pasteurize them at home, but I haven’t tried that yet.)
Mayonnaise has been around since about 1800, and I think olive oil must have often been used early on.
Try it and see what you think.

We don’t fry much anymore so we now use the more pricey and healthy Avocado oil. (Made from the meat not the seed) That, olive oil and a bit of Kerrygold or Plugra Butter.
Well, I’m not quite as old as he was when he died. But he certainly lived long, for his time.
