No one ever knows. They only count the absentee ballots if they will change the election in the state. Which is stupid because they might change local races even if they don't change the national one.
So if you are out of the country, in the military, ill or for some other reason can not vote in person your vote usually is not counted.

Take CA, IL and NY out of the mix and Trump wins by 5,000,000 votes.

Since the AZ votes have not been added, at least the results are still not counted, it would put him over the top, I think.

Though as I understand it ME has one EV for each of the two districts then two for whoever won the state overall. Thus it was 3 Clinton 1 Trump not 1 Clinton 1:Trump

Yes -- that's right. Electoral votes are assigned to the states based on their representation in the two houses of Congress. Every state has 2 Senators, and House districts in each state range from 1 (for sparsely populated states) to 53 (for California). That's why no state has fewer than 3 electoral votes, and California has the most electoral votes with 55.
So Nebraska and Maine have a system where the winner of each House district gets the electoral vote for that district, while the overall winner of the state gets the two "Senate" electoral votes.
