I was wondering when someone would knock all this the hysteria up side the head and tell it like it is. Most people think their kitchens are shining examples of health department standards but they are not. I have a friend who is a germophobe and is constantly throwing out unused leftovers every 3 days because she read on the internet to do it. But her monthly food bill is also three times ours because she is constantly throwing good food in the garbage. Un poquito loca.

You’re right. These stories are not unique. They happen at a majority of restaurants and fast food joints across the country. If you think it’s bad here, try going overseas and see the health standards there. People’s fears are larger than the danger from the bacteria itself.

Before refrigeration, soups and basic sauces were routinely kept simmering on the back of the fire. Ingredients were added as they became available and the entire pot brought to a boil once a day.

Reminds me of an old English (?) rhyme, I think was:

Peas porridge hot. Peas porridge cold. Peas porridge in the pot, nine days old.

It refers to the days when cooking was done at a fireplace. A large kettle hung from a rod that could move into or out of the coals. Leftovers from meals were just tossed into the kettle each day.

Back in the day, the cook on the line who actually made the dogs up for people would line the buns up his sweaty arm right up to his pit, drop the dogs in, and top them to order. Hence the name, 'sweat dogs'. People swore it gave them more flavor. If they tried that now, the health department would probably brick over all the doors and windows with everyone still inside, and declare it an eco-hazard.

Yeah...the “stir til the white disappears” doesn’t seem any worse objectively than my quick and dirty way of preparing oatmeal to my preferred consistency...”add water til just covered”. There’s nothing wrong with a simple visual indication of readiness!

Truthfully if I’ve been eating it this long and it tastes good and hasn’t made me sick, no revelation about how it was made is going to convince me to stop eating it short of finding out the meat is cat or dog.

My little garden is situated next to the neighbor's dog "run". Darn straight I wash everything!

I use some 'organic'/'natural' veggie cleaner in a spray bottle. "They" say it's no better than water, but when I think of those flies, I figure it must be even a little better. Makes me happier at least!
